Frugal Recipe: Healthy Mini Quiches

They're missing the pie crust element, thus less fattening, but if you’re having people over for brunch this holiday season, I think they would make a perfect accompaniment to some not-good-for-you breakfast like baked french toast or chocolate chip pancakes.

Mini Healthy Quiches
(makes 6)

3 eggs (eggs in Italy are little so if you have giant American ones, use 2)
1/2 cup lowfat milk
1 slice ham, cut into pieces
handful grated parmigiano reggiano
dollop light cream cheese
pinch salt
pinch black pepper

Beat the eggs well (until frothy) and combine with all of the ingredients. Pour into your buttered mini muffin tin and put the dollop of cream cheese in the center of each egg cup. Bake at 350 for 10-12 minutes or until they puff up and look done on top.
