Banana Bread Steel Cut Oats Recipe


Breakfast is my favorite. Most days I don't work until 9ish, "ish" being a cushion of about twenty minutes because in Italy no one is on time ever, ever. It's great. I drink my coffee slowly, read blogs and emails, respond to comments, plan the day, do some stretches, eat oatmeal. Look, even Manu knows how much I love it.

Can we discuss how much his English is improving? I just hope he doesn't ever stop saying things like, "do y have a breakfast". Because that would just be sad.


Banana Bread Steel Cut Oats
(serves one)

1 1/2 cups water or milk*
1/4 cup steel cut oats
pinch of salt
1 banana
1/2 teaspoon brown sugar (or to taste)
1/4 teaspoon vanilla 
1/4 teaspoon cinnamon
2 tablespoons chopped walnuts

Bring the water or milk just to a boil. Turn the heat to medium and add the oats and salt. Cook uncovered for 25-35 minutes stirring every now and then until the oats have absorbed most of the liquid. In the meantime, mash the banana with a fork in a bowl. Add the brown sugar, vanilla, cinnamon and walnuts. Pour in the oats and stir well. *If you like your oats to be looser, you can add more milk at the end.

Bananas and walnuts were meant to be together. Like me and breakfast, really.

Breakfast is the most important meal of the day, and for many people, it’s one that is often rushed due to a time crunch in the morning. Not everyone makes their first meal a top priority. If you have heard years worth of information implying that cereal is not a healthy choice, it’s time to rethink that. What Is Cereal? 

Cereal is a popular, often boxed breakfast food. Many people have fond memories of consuming cereal at their table for breakfast when they were a kid. Frugal Healthy Recipe: Pumpkin Walnut Oatmeal

We had been putting off the pumpkin a little around here because it’s been hot as blazes and it hasn’t quite felt like fall.
It’s hard to be in a Fally mood when it’s 150 degrees and muggy outside! But once we opened our first can of pumpkin, we haven’t looked back. We’ve been crazy pumpkin breakfast people now for two weeks, starting with my first favorite and a favorite of the kids, Pumpkin Oatmeal!
Oh it’s so good. My favorite is when I make a whole bunch of it and we eat it for a few days, it’s lovely to have breakfast already ready when you roll out of bed.

Frugal Healthy Recipe: Walnut Brownie Oatmeal

Oatmeal reminds me of pork chops. (Stay with me, here.) Remember when it was pork chop night in the 90's and the news told our moms that pork needs to be cooked? A lot! To kill the bacteria! So you got this dried out, super chewy chop that you just smothered in applesauce to try to make it better? Well, I always had the same experience with oatmeal. It was bland. But little did I know that, like the elusive juicy pork chop, there were so many amazing topping choices out there. I give you, for example, Walnut Brownie Oatmeal:
Walnut Brownie Oatmeal
(serves 1)
1/3 cup oatmeal (I love Silver Palate's Thick & Rough Oatmeal)
3/4 cup water
handful chopped walnuts
1/2 teaspoon unsweetened cocoa powder
1 teaspoon brown sugar
dash of vanilla extract

Place water and oatmeal together in a saucepan over medium high heat. When the liquid and oats come to a boil stir well to keep it from sticking and keep stirring until most of the liquid is absorbed. Take off the heat, pour into a bowl and add the rest of the ingredients. 
Obviously since the discovery of toppings, I've been having a blast experimenting with oatmeal (see Banana Bread Steel Cut Oats and Baked Peanut Butter Banana Oatmeal) and who wouldn't after a lifetime of blah? Now if only I can get pork chops to taste this good...

So let’s talk about 2 of my favorite things, when it comes to living a healthy lifestyle: Running + Oatmeal! They go hand in hand and they both make me happy physically, mentally, and nutritionally.

Running is my PASSION! I do it for so many reasons, but the main ones are that it is: a huge stress reliever. When I have a good run, my mind shuts off and I almost just daydream. It’s a wonderful feeling to be able to exercise without thinking about the actual work your body is putting into it. There are no excuses with running. All you need is your sneakers and the pavement. It’s inexpensive and the hardest part is always that first step out the door. I love the way it makes my body feel and look. I always feel my strongest and most confident when I’m training for a race or just focusing on building up my endurance. Being able to run strong, fast, and long distances is very empowering and always leaves me ready to tackle whatever the day is going to throw at me. I love it, but to stay healthy and injury free, I have learned to nourish and take care of my body, so that it will allow me to run. Yoga, strength training, and learning to fuel my body have helped me continue my passion on a regular basis. It has taken me a while to get to this point, but through experimentation and listening to my body, running is a regular part of my active lifestyle.

So how do I fuel my body when it comes to running? Everyone is different and like I’ve said before, it’s important to experiment and see what works best for you and your training. What works for me is OATMEAL! Oatmeal is my second PASSION (this of course is when it comes to healthy eating. I do also love wine, chocolate, and cake. HA!) Nothing beats a good hearty bowl of oats before my runs. I feel strong, full, and energized. Here are my 5 favorite oatmeal recipes that I absolutely love and eat on a regular basis when it comes to fueling up before a good run down the country roads of NJ. 5 Fabulous Oatmeal Combinations:
1. ½ c oats, 1 T chia seeds, 1 sliced banana, 1 “heaping” T of nut butter, dash of cinnamon & vanilla (heat up ½ the sliced banana with the oats; then top the other ½ after…DELISH);
2. ½ c oats, 1 T chia seeds, 1 kiwi, ½ c strawberries, 1 “heaping” T of nut butter;
3. ½ c oats, 2 fried eggs. ¼ c beans, tomatoes, cilantro, ¼ avocado, and salsa;
4. ½ c oats, 1/3 c mashed sweet potato, 1 T agave nectar, dash of pumpkin spice;
5. ½ c oats, 1 slice banana, 1 “heaping” T of almond butter; 1 T unsweetened dark cocoa powder, and sprinkle of unsweetened coconut flakes
* I use water with my oats, but you can always use milk or unsweetened almond milk. I also love seasoning my oats with spices, so experiment and try different flavors out!
