Mix together:
1 lb+ Mesclin and/or baby spinach
1 cup chopped walnuts (put on the side)
1 cup dried cranberries
1 cup goat cheese or blue cheese
Dressing:
1 large garlic clove, mashed & chopped
½ cup walnut or veg oil (not olive)
1/3 cup balsamic vinegar
¼ cup maple syrup (yes…that’s the secret ingredient)
Mix dressing ingredients and pour over salad mixture. Enjoy!!
