Banana Bread Steel Cut Oats Recipe


Breakfast is my favorite. Most days I don't work until 9ish, "ish" being a cushion of about twenty minutes because in Italy no one is on time ever, ever. It's great. I drink my coffee slowly, read blogs and emails, respond to comments, plan the day, do some stretches, eat oatmeal. Look, even Manu knows how much I love it.

Can we discuss how much his English is improving? I just hope he doesn't ever stop saying things like, "do y have a breakfast". Because that would just be sad.


Banana Bread Steel Cut Oats
(serves one)

1 1/2 cups water or milk*
1/4 cup steel cut oats
pinch of salt
1 banana
1/2 teaspoon brown sugar (or to taste)
1/4 teaspoon vanilla 
1/4 teaspoon cinnamon
2 tablespoons chopped walnuts

Bring the water or milk just to a boil. Turn the heat to medium and add the oats and salt. Cook uncovered for 25-35 minutes stirring every now and then until the oats have absorbed most of the liquid. In the meantime, mash the banana with a fork in a bowl. Add the brown sugar, vanilla, cinnamon and walnuts. Pour in the oats and stir well. *If you like your oats to be looser, you can add more milk at the end.

Bananas and walnuts were meant to be together. Like me and breakfast, really.

How To Make Home-Made Whey Protein



Ever wonder what the nursery rhyme means when Little Miss Muffett is eating her curds and whey? Well, a lot of the hardcore lifters and exercise folks out there should know; they are drinking copious amounts of it after all their workouts.
The basics behind a protein shake is that they help your muscles heal and grow after you have been working out; it also is claimed to have anti-inflammatory and anti-cancer properties. So, it is usually a good idea to have this after your workout routine.
Whey protein is actually surprisingly easy to make, a lot cheaper than the stuff you buy in the stores, and the leftover ingredients can be made to make fun things like cheese.
Here’s what you’ll need:
  • 1 quart or liter of milk (you can add more or less depending on how much you want to make… just adjust the ratios)
  • a saucepan
  • vinegar or lemon juice (about 2 tablespoons)
  • strainer
  • paper towels or a cheese cloth
  • Any flavoring or spices you want
1) Get your milk and start to boil it on a medium to low heat. Keep a close eye on it because you don’t want it to get too hot.
2) When you start to notice a bunch of bubbles around the rim of the sauce pan add the vinegar or lemon juice and stir it around. The mixture should separate pretty quickly into curds and whey. If it doesn’t just add a little more vinegar or lemon juice until it does. The curds are the solid looking things and the whey is the liquid.
3) Get a strainer (cover it in paper towels or cheese cloth if you want to keep the curds and make it into cheese). Separate the curds from the whey. Let the whey cool down in the fridge for a while and then add any ingredients. Some suggestions for flavoring: Nutmeg, cinnamon, honey, chocolate are great options. Just test it out and see what works for you. The taste might be different for some people if it is, just dilute it with something else like water, or juice.
This is the same stuff you will buy in the store except it is not dehydrated and probably won’t have any weird additives that will give you a gorilla back. Enjoy!
According to experts  “Whey is the fluid by product of cheese manufacture. It is produced in far greater volume than cheese, the ration of whey to cheese being about 10:1. For numerous reasons, whey is underutilized and not more than half of the United States production used. The rest, amounting to billion of pounds represents a waste disposable problem.
Considering the growing rate of cheese production and the ever-tightening constraints in the disposal of processing plant effluents, the problem of what to do with whey is one of major proportions. Whey comprises about 5% lactose, 2% other milk components and 93% water.”
So, a majority of the liquid is water and 2% of it is probably the proteins you would normally get from a whey protein shake. Still makes an easy drink, but it’s definitely not as strong as the concentrated form you can get at the store. According to Wikipedia “whey protein can be simply processed by drying…” There are other more complicated ways as well. Anyone have any ideas on the best way to make a concentrated form of this?

I would suggest taking the liquid and leaving it uncovered over a low heat on the stove, this should allow excess water to evaporate off and leave a more concentrated solution.

Hamburgers has always been a no -  no for fitness fanatics, it has an ugly image of being full of fat and bad cholesterol. Thus burgers, most often than not are perceived as “unhealthy food”. But there’s a way to enjoy your burger and make it healthier. Read more on this article since we’ll show you how!

A hamburger is a sandwich consisting of one or more fried patties of ground meat, usually beef, inside a bread roll or bun. The patty can be broiled with a pan, grilled, or roasted. The hamburgers are frequently served with spinach, tomato, onion, bacon, or pickles; condiments include ketchup, mustard, mayonnaise, savory, or "special sauce." 

The word "burger" can also be used in the meat patty itself, especially in the UK, where the word "patty" is seldom used, or the term can also be used to refer to ground beef. Because hamburger typically includes beef, "burger" can, for clarification, be prefixed to the type of meat or meat substitute used in beef burgers, turkey burgers, bison burgers, or veggie burgers. 

Hamburgers are sold in fast-food restaurants, catering establishments, specialty restaurants, and high-class restaurants, where burgers may sell the cost of a fast-food burger several times but can be one of the cheaper options available on the menu. The hamburger has various international and regional variations. 

Building A Burger 

Making the best hamburger is in the process — how you prepare it and barbecue it. 

• The best burgers are made of a high-grade 80/20 mixture of freshly ground beef chuck or lean hamburger meat. Spread the beef with salt and pepper flat and season. If you have a secret ingredient such as Worcestershire sauce or bacon split, add it now. Toss softly together. You do not want to overmix. 

• Take 5 to 6 ounces of meat and gently throw, creating a ball, from hand to hand. The patty should be at least 3/4-1 inch thick and at least as long as your bun. Create a divot with your thumb in the center of the burger to help it maintain its shape during cooking. 

• Preheat the grill over direct heat to medium or medium-high. Heat the grill with a neutral oil, such as canola or potato. If the oil starts to smoke, the burgers are hot enough to add. Make sure your burgers are at room temperature and apply salt and pepper again. Only put the burgers on the grill and let them be. The least the burger hits, the healthier. Stop the temptation to push down for a juicier burger. 

• When the grate releases the burger without adhesive, it's time to flip. Cook about 5 minutes per side for medium burgers. Go a little longer for well-done. 

• Make the cheese attach, push the burgers to the cooler side of the barbecue, cover with cheese for a minute, and let the cheese melt. Place the patties on the buns, add additional toppings, and serve. 

A Healthier Version Of Burgers 

It's time to shoot your barbecue and plan for everyone's favorite cookout: burgers. While burgers are reputedly unhealthy and high in calories, this must not be the case. Using these tips to help create your burgers healthier! 

• Using Lean Meat 

Use beef 90% lean or higher if you prefer beef. Lean hamburger meat is a healthy protein source and has fewer calories than Non-lean meat. Lean meats are popular with the low-calorie and low-fat diets. 

Selenium has antioxidant properties that prevent cells from being destroyed by free radicals. Selenium strengthens the immune system as well. 

Vitamins B3 and B6 allow the body to make glucose stable. Vitamin B3, also known as niacin, aids in stress development and sex hormone production. Choline helps the work of the nerve and can reduce inflammation. 

Lean meat is a simple way to reduce the amount of saturated fat. According to the USDA, the term lean is used to identify products with less than 10 grams of fat and four and a half grams of saturated fat per 100 grams. "Extra lean" means less than 5 grams of fat and two grams of fat per 100 grams. 

If you shop for meat, you can easily pick the alternative by searching for meat that is between 90 and 95% lean. 

Keep in mind that, while leaner choices cut fat and calories, they can dry your burger as well. To keep it as juicy as possible, use the beef to make the patties as small as possible. When the burgers are on the grill or pot, don't push them with a spatula that releases even more juice. 

• Use Vegetables 

Pile plants into your burgers. You can use tomatoes, lettuce, chili, peppers, and onions. Vegetables provide meager calories and fiber to keep you happy. Choose an ingredient with higher calories and add in small amounts. 

• Reduce Your Grains 

We also suggest that you complete half your grains. To do this, pick wheat or pita buns. You can forget the bread and use salad leaves instead. Or be creative by cutting and topping your burger with your green salad. 

• Don't Forget The Spices 

Spices and herbs add to burgers a lot of flavors and contain antioxidant compounds such as polyphenols. Oregano, thyme, sage, rosemary, and saffron, especially in their dried form, have some of the highest rates. 

Before you cook the patties, add some shakes of these dried spices to the meat or veggies blend. Then add fresh or chopped herbs to your burger before eating for a further seasoning time before serving the dish.

- 1 teaspoon red pepper 
- 1 pinch of salt & pepper 
- 1 cup low fat shredded pepper jack cheese 

Recipe Directions

Spray the bell peppers with a little olive oil and roast in oven for 10 minutes to soften a little. Cook quinoa and set aside. Sauté the onions, garlic and spices. Then add the corn, beans, and tomatoes. Mix with chicken and then combine everything together. Stuff peppers with the mix. Bake at 350 degrees for 15-20 minutes. Add reduced fat shredded pepper jack cheese to the top of the peppers and then broil for 5 minutes or until cheese has melted and bubbly.

Everything was ready in less than 5 minutes, start to finish, and it was totally delicious to boot! The flavors of the vegetables have gotten even better as they sit, and the creaminess of the vegan cheese throughout just brought the whole dish together perfectly.
Good thing I still have more leftover vegetables for more.

Making meals that will be great for your body and wellbeing doesn’t need to involve you being stuck in the kitchen for hours on end. Just follow these recipes and you will be serving dishes that are delicious and good for you in a flash. 

Honey Lemon Ricotta Breakfast Toast 

Let’s begin with a treat perfect at breakfast time which is a lot more than just plain old toast. They say that breakfast is the most important meal of the day, and you’ll never want to miss it anyway with honey lemon ricotta breakfast toast on your plate! 

Time To Make The Dish 

5 minutes 

The Ingredients You’ll Need 

• 4 sliced figs 
• 2 slices of wholegrain or gluten-free bread 
• 2 tablespoons of pistachio pieces 
• 1 teaspoon of lemon zest 
• ½ fresh lemon (juiced) 
• ½ a tablespoon of honey 
• ¼ of a cup of low-fat ricotta 

How To Make The Meal 

1. Use a toaster to toast the wholegrain or gluten-free bread. 
2. Once the bread is toasting, whip together the honey, fresh lemon juice, and low-fat ricotta until the mixture is both smooth and creamy. 
3. Once the bread has been toasted, spread the honey, lemon juice and ricotta mixture evenly over the toast. 
4. Place the sliced figs on top of the toast. 
5. Sprinkle the lemon zest and pistachio pieces onto the toast to finish. 

Egyptian Egg Salad 

The recipe of Egyptian egg salad blends together fava beans, egg, and the rich flavours received from cumin, garlic, lemon, and tahini to make this dish much more than just your standard salad. Time to make the dish 15 minutes (10 minutes to prepare the food and then 5 minutes to cook) The ingredients you’ll need 

• 3 large and finely chopped garlic cloves 
• 2 large eggs 
• 2 Little Gem lettuces, cut into wedges 
• 2 tomatoes, cut into wedges 
• 1 fresh lemon (juiced) 
• 1 chopped red onion 
• 1 tablespoon of tahini 
• 1 tablespoon of rapeseed oil 
• 1 teaspoon of ground cumin 
• ½ a teaspoon of cumin seeds 
• 400g can of fava beans, with the juice reserved 
• A sprinkling of dried chili flakes 
• Roughly chopped flat-leaf parsley 

How To Make The Meal 

1. Start by bringing a pan of water to the boil, before lowering in the two eggs and boiling them for eight minutes. 

2. Drain the eggs and run them under a cold tap to cool them slightly, before peeling and halving them. 

3. Mix three tablespoons of water, one tablespoon of lemon juice, and the tahini to create the dressing. 

4. Heat the rapeseed oil and then fry both the garlic and the onion for five minutes to soften them. 

5. Add the ground cumin and seeds into the frying pan, stirring them briefly before adding the beans. 

6. Lightly crush some of the beans as they gain heat, then add some of the juice from the can of beans so that you receive a creamy consistency. A few of the beans should be kept whole during this stage. 

7. Add lemon juice and a little bit of seasoning to taste. 

8. Spoon the beans onto plates along with the lettuce, adding the eggs and tomatoes next, and finally the tahini dressing, chili, and parsley. 

Spicy Chicken & Avocado Wraps 

If you’re looking for a dish that you don’t necessarily need to eat straight after cooking and can instead pack away for lunch, we recommend these spicy chicken and avocado wraps. Time to make the dish 13 minutes (5 minutes to prepare the food and then 8 minutes to cook) The ingredients you’ll need 

 2 seeded wraps 
 1 chicken breast, which is approximately 180 grams and thinly sliced at an angle 
 1 chopped garlic clove 
 1 avocado, halved and stoned 
 1 sliced roasted red pepper from a jar 
 1 teaspoon of olive oil 
 ½ a teaspoon of mild chili powder 
 Juice squeezed from ½ a lime 
 A few chopped sprigs of coriander 

How To Make The Meal 

1. Mix the chicken breast with the garlic, chili powder, and lime juice. 

2. Heat the olive oil in a non-stick frying pan then fry the chicken for a couple of minutes. 

3. While the chicken is frying, warm the seeded wraps either by following the pack instructions or by heating them over a flame to slightly char them if you have a gas hob. A tip for the wraps is not to allow them to dry out otherwise they’ll be difficult to roll. 

4. Squash half an avocado onto each of the wraps. 

5. Add the red peppers to the frying pan to warm them through. 

6. Pile the peppers onto the wraps, along with the chicken. 

7. Finish by sprinkling the coriander over the wraps, rolling them up, and then cutting them in half. 

Pina Colada Yogurt Parfaits 

A dish you can enjoy either at breakfast or as a dessert, Pina Colada yogurt parfaits blends together sweet fruits from the tropics with the bitterness of Greek yogurt in magnificent fashion. With this treat, your body also benefits from protein from the yogurt, good digestive enzymes from the pineapple, healthy fats courtesy of the coconut, and so much more. Time to make the dish 5 minutes The ingredients you’ll need 

 2 cups of Greek-style yogurt 
 1 cup of fresh pineapple, chopped 
 ½ cup of lightly toasted, unsweetened coconut flakes 
 2 tablespoons of raw honey 
 4 teaspoons of chia seeds 
 1 teaspoon of raw honey (for drizzling) 

How To Make The Meal 

1. Mix the Greek-style yogurt, two tablespoons of the raw honey, and three teaspoons of the chia seeds in a bowl. Set aside. 

2. Layer a few tablespoons of the fresh pineapple into two glasses, along with a little amount of the coconut flakes and some of the yogurt mixture. 

3. Repeat the process of step two for as many layers as you desire, though making sure to end with the pineapple and coconut on top of the final layer. 

4. On top of the parfaits, sprinkle the final teaspoon of chia seeds. 

5. Drizzle the teaspoon of raw honey over the top of the mixture to finish. 

Ingredients Older People Should Be Looking To Eat More Of 

There you have it, four delicious dishes that are healthy, as well as both simple and quick to make. There’re so many more meals we could have included in this guide, of course. Not only are these low in fat and high in fiber, but they are also excellent sources of protein, vitamins, and minerals. 

Milk And Dairy Foods, Such As Cheese And Yogurt 

These are important sources of calcium, needed by the body as a helping hand to build strong bones, as well as vitamin D, which the body requires to help it absorb calcium and thus strengthen bones. If you need to opt for dairy alternatives, choose varieties which are unsweetened and calcium-fortified. 

Beans, Lentils, And Peas 

These affordable health foods all make for excellent alternatives to meat, as a result of them being naturally low in fat and yet also high in protein, fiber, vitamins, and minerals. Make sure they are a staple of your daily diet.

Reduced Fat & Protein Packed Vegan Macaroni Salad

I've reduced the fat content and added extra protein and fiber with a few simple healthy ingredient swaps and additions. And with vegan mayonnaise substitute in, it's a 100% vegan recipe as well! Now macaroni salad can realistically fit into your healthy meal plan program! Savor the flavor and maximize your muscle with this low fat and protein-packed frugal macaroni salad recipe!

Ingredients

- 1-2 tablespoon Vegan Mayonnaise
- 32 oz of Barilla Protein Plus macaroni 
- 1-2 cups diced dill pickles
- 1 cups diced carrots 
- 1 cups diced celery 
- 1-1/2 to 2 cups diced onions 
- 1 teaspoon Chia Seeds
- 1 teaspoon ground flaxseed
- 1 small-medium carrot grated
- 1 teaspoon chopped basil leaves
- 1 teaspoon chopped parsley leaves

Instructions

Prepare whole grain protein macaroni according to directions and refrigerate. Chop all vegetables and mix together. After the macaroni has cooled completely, mix the veggies in with the macaroni until thoroughly blended. Add vegan mayo until salad is sufficiently covered to desired effect. Refrigerate prior to serving.

Pair up with a frugal workout and some motivating tunes and you're well on your way to achieving your fitness goals!

Chilled Squash & Carrot Soup Recipe


Who doesn't love a good hearty and healthy soup? This one for chilled squash and carrot soup will be one of your new favorites I assure you! It will warm you up and it's rich in vitamins, antioxidants, and fiber!

Ingredients: 

- 1-1/2 pounds butternut squash, peeled, seeded, and cubed
- 1 can vegetable or chicken broth 
- 2 medium carrots, sliced 
- 1 medium chopped onion 
- 1/4 tsp. salt 
- 1/2 cup fat-free evaporated milk 
- 3 tbsp. fat-free sour cream optional

Instructions: 

In a large saucepan, combine the squash, broth, carrots, onion, and salt. Bring to a boil. Reduce heat; cover and simmer 15-20 minutes or until vegetables are very tender. Remove from heat; cool. In a blender or food processor, puree squash mixture in batches. Transfer to a bowl, stir in evaporated milk. Cover and chill until serving. Garnish with sour cream, if desired. Enjoy the clean healthy eating!

Gluten Free Flour Recipe For Cakes, Breads, Pizza, & More!

There are more people with Celiac every year and even more people going gluten-free by choice for nutritional purposes. It's easier to find gluten-free alternatives these days than in previous years, but it is still challenging for some baked goods. Here is a great recipe for gluten free flour that you can use in cakes, breads, pizza, and many other food items. And it won't break your budget either! 

Gluten-Free Flour Mixture 

Yield: 3 cups 

This mix can be used as a one-to-one cup substitution for wheat in most recipes. Gluten-free flour, mix the following ingredients. 

Ingredients

- 2 cups white rice flour 
- 2/3 cup potato starch* 
- 1/3 cup tapioca starch 

All of the above items can be found at most local supermarkets. Whole Foods carries all of these products for instance. These items can be found at less cost at various international food markets. If you do not want to mix your own gluten free flour mixture, most supermarkets carry ready-made gluten free mixtures. 

Binding Agent 

All gluten-free recipes require a binding agent to make up for the lack of gluten. For each cup of gluten-free flour (or flour mix) use an appropriate amount of xanthan or guar gum (found in local markets): 1 tsp for cakes 2 tsps for breads or pizza. 1 tsp works fine for most cookies.

Frugal Recipe: Epic Protein Chili


Enjoy this healthy & hearty chili recipe! Power up those taste buds for pennies!!

Ingredients:

1/2 cup red wine
2 T. cumin
16 oz black beans
2 large jalapenos chopped
1/3 cup chili powder
28 oz whole tomatoes chopped with reserved liquid
2 lbs pork butt in 1 inch cubes
1 lb beef stew meat in 1 inch cubes
3 garlic cloves chopped
2 green bell peppers chopped
2 onions chopped
3 T. olive oil

Instructions:

Heat oil, and sauté onions, peppers, and garlic. Sauté until tender for 14 minutes. Transfer mixture to a plate. Add beef and pork and sauté 10 minutes or no longer pink. Return onion mixture, add tomatoes with liquid, add chili powder, jalapeños, and cumin. Season with salt and pepper if desired. Cover and simmer 1 hour until meat is tender. Add black beans and red wine to chili. Simmer until thicken and tender. About 30 minutes. Adjust seasoning. Ladle into bowls with garnish of choice.

Lean Mean Terrific Turkey Meatballs

You gotta love some good meatballs, especially when they're lean and mean meatballs!
Simple, affordable, and delicious protein that won't derail your diet!
Ingredients:
One pound lean ground turkey or chicken.
½ teaspoon Italian seasoning.
Two shakes garlic powder
½ cup water
½ cup breadcrumbs
Salt and pepper to taste

Instructions:
Preheat oven to 350 degrees. Mix all together in a bowl. Roll into small meatballs. Bake in oven for about 20 min. turning once at 10 minutes. Check to see that center is hot and cooked through. Serve with any whole wheat or whole grain pasta and sauce. OR use in whole wheat rolls for meatball sandwiches with sauce. Top with part skim mozzarella cheese and broil until cheese is bubbly.
