We are going to focus on American caviar because they are inexpensive, and there are so many to choose from. Because Caspian Sea caviar demand was so high, the Caspian Beluga is now endangered so it is even harder to find it and the prices of Russian and Iranian caviar has sky-rocketed. The United States caviar industry has taken advantage of this and is doing a great job of filling demand and is doing so in an environmentally-friendly way with their seafood. They have also done a great job of matching the flavor and quality of the famous Caspian caviar while keeping the prices affordable. 

The first American caviar that you must try is the Hackleback caviar, also known as American Sturgeon. This sturgeon lives in the Mississippi River, and its roe is small, black, melts in your mouth and leaves a wonderful aftertaste. This aftertaste is what differentiates it from other caviars, and it's great. If you are looking for caviar that tastes similar to the Caspian Osetra, look for the white sturgeon from California. 

If you crave salty and juicy caviar, try some Salmon Caviar. This roe comes from the female salmon that can be found in the Pacific Northwest and Alaska. Its appearance is beautiful, with its bright and reddish color and it's usually used as a garnish. Another American caviar that is commonly used as a garnish is the Whitefish caviar. These eggs are very firm, golden in color and taste wonderful. 

Finally, we can't talk about the Paddlefish caviar which out of all of the American caviars is the closest substitute to Sevruga. If you are not familiar with Sevruga, it is the most expensive sturgeon caviar from the Caspian Sea. The Paddlefish caviar is found in the Mississippi River, and its popularity is increasing quickly, so make sure you order some right away. Just like Sevruga, when you eat this caviar you will be amazed at its smooth and slightly salty flavor.

King Crab Recipes

King crab, along with all seafood, is a passion of mine. The truth is that many individuals like king crab recipes. Today's menu is one of my favorites, for my family and especially my grandmother! Unfortunately, we don't get to prepare it often due to the availability and high expense of seafood. 

King crab is the star of this Thai curried stir fry, and one of the most popular meals served in many restaurants in Thailand. It is simple to cook and alternatively, along with the king crab, you can use mixed seafood of your choice. So perhaps we shall begin. 

I usually cook this recipe with whole king crab chopped into lump size pieces. Here is a couple of tips dealing with either frozen or fresh, live king crab and seafood. Make sure you always thaw frozen seafood safely in the refrigerator. A humane way to use live seafood is to place your king crab in the freezer. It makes them sleep, and as I said, it is better for them when you place them in the boiling water. 

Prepare the sauce by mixing one egg in a bowl. Add one tbsp* of oyster sauce, one tbsp. light soy sauce, one tsp** ginger, one tsp. sugar and just one tbsp. curry powder. Beat together until the flavors marry. Set a pan on at medium heat. Add six tablespoons of oil. Mince five cloves of garlic, one green onion cut into one-inch pieces and dice one onion. Sautee the garlic for two minutes, then add the crabmeat stir fry another two to four minutes until cooked through. Toss with the light soy sauce combination, serve on a bed of rice and enjoy. 

An all-American favorite and mine too is the crabcake, served as an appetizer or a main dish. There are many recipes from all regions of the country. Basically, the main ingredients are crabmeat, eggs, bread crumbs and seasonings, a well known being Old Bay Seasonings. A crabcake can be baked, sauteed, deep fried and even grilled. Dredge it in crackers crumbs, flour, or just add parsley for color, and a nice tip is to refrigerate them a bit, two to four hours before cooking. They will stay together when cooked. 

While using your favorite recipe or cooking method, here are a few helpful hints. If you saute' the king crabcakes, brown them in butter until crispy on each side. Baking, well put a little pat of butter on each crabcake on a larger baking sheet. Preheat your oven to 450 degrees and cook until crisp and cooked throughout, or deep fry at 360 to 380 for two to three minutes. 

A popular, well-known crabcake is the Maryland Crabcake, another one of my favorite recipes that uses mayonnaise, mustard and hot sauce in the recipe. It can be placed on the bread of your choice, as a sandwich with a creamy tartar sauce of mayonnaise, pickle relish, Worcestershire sauce, mustard if you prefer, lemon and hot sauce for heat. Or a tomato based seafood sauce with a horseradish that spices it up. Just remember, whether it is king crab or your favorite seafood. Enjoy this delicious and nutritious dish!

1.      Salmon

A little bit more expensive than most other items on the list, but Salmon provides an excellent source of complete proteins as well as a significant amount of Omega-3 Fatty Acids. Salmon is a phenomenal food, the only very minor shortcomings include its moderate cholesterol content and  that a large amount of salmon on the market come from fish farms. Choose Wild Alaskan Salmon if possible for the best nutritional value. Unfortunately, the highest quality of salmon is also usually the more expensive kind. If you find salmon for an excellent price, it is most likely the farmed salmon so make sure to double check the food label or the advertisement. Occasionally there are sales on salmon making it more affordable I have included a few salmon recipes later on in this book.



2.      Shrimp

Shrimp is an excellent source of almost pure protein. There is very low fat content, the only real downside is that it is very high in cholesterol. Shrimp gets a bad reputation sometimes because it is often accompanied with plates of pasta, rich creamy sauces, or plenty of tartar sauce. Buying shrimp when it is on sale or for special occasions is a good snack or meal that is high in protein and tastes great. At weddings and other formal events, I make sure to head right to the shrimp platter and stock up. Sometimes shrimp will go on sale, and some people eat small amounts of shrimp unlike myself, so I have included a few shrimp recipes later on in this book.

3.      Acai Berries

While I think acai berries have recently been touted a little too much as super-antioxidants, they are still excellent foods to add to your diet. While they might not cure all diseases and help you lose 20 lbs, they are worth buying if you have the extra money to spend. Acai berries aren’t sold in a lot of stores and the acai berry nutritional supplements are at least moderately expensive. There are countless acai berry supplements weight loss drinks but it is not conclusive whether these products give you the same benefits as the acai berries themselves. You are better off purchasing grapes, blueberries, or green tea instead of acai berries to get in your antioxidants if you are on a budget.

4.      Almonds/Almond Butter

Almonds are probably the best nut to snack on because of a very low percentage of saturated fat content and a lower carbohydrate content than most other nuts. Almonds are also very high in Vitamin E and other micronutrients. Almond butter is usually very expensive but it has a delicious sweet and toasty taste. Almonds are great as a snack or to add some healthy fat to a meal which is important to improve satiety and fat-soluble vitamin absorption. If almonds or almond butter are too expensive, natural peanut butter or plain peanuts are a good substitute. If you buy them in bulk and eat them slowly, a bag of almonds will last you a long time and provide you with several high quality snacks.

5.      Soy Milk

Unless you are lactose intolerant or vegan, I would recommend drinking skim milk instead because it is about 1/3 of the cost. That being said, soy milk is still very good for you and not outrageously priced. Soy is one of the only major plant sources of complete proteins which makes it crucial for vegetarians. It is good first thing in the morning or post-workout because it is quickly broken down and absorbed by the body. Soy also has healthy fats, no cholesterol, and provides heart healthy flavenoids that reduce cholesterol levels. Soymilk can be purchased in several delicious flavors with added sugar or in plain form with less sugar than milk. If you don’t drink regular milk, I’d highly recommend adding soy milk to your diet. Don’t bother purchasing much rice or almond milk since neither of them provide any significant protein.

Frugal Healthy Recipe: Marinade For Swordfish 2 Options

We love these quick and light dinner. The marinade will tenderize the fish and give it big favor.

Option #1 -Marinade for Swordfish or any other firm white fish:
Prep time: 10 minutes
Marinade time: 20-25 minutes
Cook time: total of 10-14 minutes

Mix Marinade Ingredients in a bowl:
1/2 cup of olive oil and vinegar dressing salad dressing, i.e., Paul Newman, or any Italian salad dressing
1 freshly squeezed lemon juice
1 freshly squeezed lime juice
1-2 cloves of chopped fresh garlic
2t of regular or lite soy sauce

Directions: 
Pour marinade over 1-2 pounds of fish. Coat both sides. Marinade for 20-25 minutes. Drain marinade. Heat oven on broil, cook each side about 7 minutes or may be barbecued (not on direct heat) about 5 minutes on the each side. Serve with fresh lemon, rice, and salad.



Option #2 – Marinade for Swordfish
Prep time: 10 minutes
Marinade time: 20-25 minutes
Cook time: total of 10-14 minutes

Mix ingredient in a bowl:
1/4 cup of olive oil
2t of regular or lite soy sauce
1/2t of garlic powder

Directions:
Pour over swordfish and coat both sides. Marinade for 15 minutes. No need to drain marinade. Broil at 500 degree for about 5-7 minutes per side.
Serve with lemon, rice and salad.
