Frugal Recipe: Banana Bread Protein Pancakes

Banana Bread Protein Pancakes

  • 1 cup buckwheat flour
  • 2 tbs brown sugar
  • 1 tbs baking powder
  • 1 tbs ground flax
  • 1 whole, large mashed banana
  • 1 tbs cinnamon (I like a lot of cinnamon)
  • 1 scoop protein powder
  • 2 tbs peanut butter
  • 1/4 scoop of greek yogurt
  • 1 cup almond milk (or whatever milk you have)
  • Mix everything together, cook in coconut oil on medium heat and enjoy! I've also made these "vegan" by omitting the greek yogurt, milk and using pea/hemp protein (not my fave) and just using water instead. They still turned out great!
