Frugal Recipe: Chicken Cacciatore

2-3 lbs. chicken breast
2 tbsp whole wheat flour
2 tbsp. chopped onions
1/2 cup tomato paste
3/4 cup chicken broth or water
1/8 tsp. thyme
1/2 tsp. basil
1 cup mushrooms
1 tsp. salt
Green pepper (optional)
1/2 cup dry white wine (optional)

Cut chicken into individual pieces. Dredge with flour and sauté until brown in olive oil. Add remaining ingredients and simmer covered for 1 hour or until tender. Best served with brown rice, quinoa, or whole grain pasta
