Frugal Healthy Recipe: Roasted Sweet Potato Slices

If you love sweet potato fries this recipe is a good alternative. The sweet potato slices are roasted in the oven with very little oil. The slices come out crunchy and incredibly sweet.

Prep time: 15 minutes
Cook time: 25 minutes (depending on your oven)
Serves: As a side dish, 4. As a main dish, 2

Ingredients:
2 large sweet potato, peeled
sea salt and pepper to taste
olive oil for the roasting pan

Directions:
Turn on over to 450-500 degrees
Slice sweet potato anyway you like in 1/2″ thick
In a flat roasting pan (I like to cover my bottom with aluminium foil to eliminate washing – I know this is not good for the environment) brush a light coating of olive oil (I use EEO.) Make a single layer of sweet potato. Brush lightly the top of the each slice. Lightly salt and pepper.
Roast in hot oven as close to the heating element until the top is bubbly and brown. It takes about 15 minutes to roast depending on your oven. Eat when cool. The top will be crunchy.
