Frugal Recipe: Broccoli Cheddar Omelet



Ingredients:
Non-Stick Vegetable Oil Spray
3 Eggs (Egg Whites if trying to lose weight)
2/3 Cup Broccoli
2/3 Cup Kraft Fat-Free Shredded Cheddar Cheese
2/3 Cup Kraft Fat-Free Shredded Mozarella Cheese

Instructions:
Crack 3 eggs and beat them in a bowl with a fork or whisk. Heat up a frying pan on the stove to medium. Have your cup of broccoli and cups of cheese ready. Spray pan thoroughly with non-stick vegetable oil spray. Pour beaten eggs into frying pan, cover the whole surface of the pan, and allow the eggs to solidify at least halfway before adding broccoli and cheeses to the middle. After eggs have solidified, fold the egg over the broccoli and cheeses then press down to ensure it is closed. Cook for another 30 seconds and then flip over and press down with the spatula. Repeat if needed and cook until desired texture.
