We had been putting off the pumpkin a little around here because it’s been hot as blazes and it hasn’t quite felt like fall.
It’s hard to be in a Fally mood when it’s 150 degrees and muggy outside! But once we opened our first can of pumpkin, we haven’t looked back. We’ve been crazy pumpkin breakfast people now for two weeks, starting with my first favorite and a favorite of the kids, Pumpkin Oatmeal!
Oh it’s so good. My favorite is when I make a whole bunch of it and we eat it for a few days, it’s lovely to have breakfast already ready when you roll out of bed.
So here’s the recipe! Feel free to print it or pin it!
Pumpkin Oatmeal
Ingredients:
- 3 cups rolled oats (I use Publix brand organic)
- 3 cups water
- 1/2 cup ground flax seed
- 1 1/2 tsp. cinnamon
- 1/4 cup brown sugar
- 3/4 cup pumpkin
- Walnuts or almonds
Directions:
Bring water to boil in medium saucepan. Stir in oats. Reduce heat to medium, stirring occasionally until oats thicken. (Note: you can make any brand of oatmeal according to its directions.) Add flax seed, spices, brown sugar and pumpkin. Stir until combined. Remove from heat. top with walnuts or almonds and serve! You can also add dried cranberries, raisins or anything else you want!

Put the rest in a giant bowl for tomorrow. The end. Enjoy!
