This has quickly become one of my very favorite things in the world. Adapted and inspired from a recipe I saw on Pinterest of course, except that the original recipe was beef and this one’s pork, and well I pretty much changed the whole thing. (I’m sure that version is still delicious though!)
This is simple in the crockpot and requires just a little sauce-making at the end with all of the magical goodness from what hath transpired all day in the crockpot.
It’s one of the recipes that goes great with a baked potato to help lop up all the gravy and perhaps a piece of bread with butter too. I chose a lean cut of no preservatives/additives pork so the meat is lean and you can scale back on your sauce usage if you’re worried about calories.

Crockpot Balsamic Pork with Onions
Ingredients:
- 2-3 large onions, sliced
- 1 lean pork roast
- 1/4 cup balsamic vinegar
- 1 cup water
- salt & pepper
Sauce:
- 1-2 tbsp corn starch or flour with enough cold water in it to make a paste consistency
- 1 cup water
- 1/4 cup balsamic vinegar
- 1/4 cup brown sugar
Directions:
Sprinkle salt and pepper on both sides of pork roast and place on bed of sliced onions in crockpot. Add water and balsamic vinegar and set on low for 6-8 hours. When pork is fully cooked, remove pork and onions, pour only the liquid from the crockpot into a sauce pan on the stove on medium and put pork and onions in a serving bowl while you make the sauce. In the sauce pan, add another cup of water, the balsamic vinegar, brown sugar and stir well, bringing to a boil. Stir in flour or corn starch mixture using a fork, making sure to stir out all the lumps and stirring frequently until thickened. Remove and pour into serving bowl.
Serve with side of baked potato, rice or whatever! Delicious!! Let me know if you make this or modify, I’d love to know what you think!
