Upside Down Pineapple Muffins


Need a delicious dessert that won't derail the diet? These upside down pineapple muffins are perfect for packing flavor without hitting you with too many calories. Several ingredients are sugar-free, reduced sugar, or reduced fat to help keep your waistline thin. 

Ingredients 

- 1/2 cup packed sugar-free brown sugar 
- 1 tablespoon filtered water 
- 20 oz can crushed and drained pineapple
- 2-2/3 cups whole grain or alternative flour 
- 1-1/3 cup granulated zero calorie sugar substitute 
- 4 teaspoon baking powder 
- 1-1/3 cups skim, 2%, or unsweetened soy milk 
- 1 tablespoon pineapple juice
- 1/2 cup softened Smart Balance vegetable spread
- 2 cage free eggs 
- 2 teaspoon vanilla extract

Optional: Top with additional pineapple slices and cherries

Instructions

Preheat your oven to 350 degrees. In a medium mixing bowl, stir together flour, granulated sugar, brown sugar and baking powder. Add reduced fat milk, vegetable oil spread, egg, pineapple (for an added taste, pineapple juice, and vanilla extract. Beat with an electric mixer on low speed till combined. Beat on medium speed for 1 minute. Spoon batter evenly into prepared muffin pans. Bake in a oven for 25 minutes or til a wooden toothpick comes out clean. Add pineapple slices and cherries on top if you desire. Cool on a wire rack for 5 minutes and enjoy these perfect pineapple muffins!
