Homemade Fruit And Honey Yogurt Popsicles Recipe



Homemade popsicles for the kids and me.


Continuing with September as National Honey Month, I am celebrating the popsicle! I get tired of having to FIND ice cream with no preservatives or popsicles with no red # whatever in it and so I drooled over this recipe when I found it is a Strawberry Honey Frozen Yogurt Popsicle.
Or whatever type of fruit you want in it really, it is addicting!
The recipe is really flexible, it doesn’t mind what kind of fruit you use! It’s really quite simple to make and it freezes really fast.
After an evening in Florida in early September when it is still smoking hot while you’re playing frisbee, scootering and biking, these popsicles were an awesome finish to the day to cool off.

He was so excited he forgot to take his helmet off.
Here’s the recipe and I gotta say I have a little extra respect for it because it doubles as an amazing smoothie! I had to really stop myself from drinking it before I poured it into the little cups and ruining it for everyone! It was great after running around all day.

He was thinking “Will you ever just let me eat it or do you always have to take a picture.”

Do the same thing in the morning but don’t freeze it and don’t pour them in tiny cups, and keep it all to yourself and you’ve got a delish smoothie recipe too!

They say it is much easier to order a red velvet cake online, rather than baking one yourself. But, they don’t know what fun and satisfaction come along with baking a dreamy red velvet cake. So, for all those who don’t quite know about this heavenly dessert, let’s quickly go through some of the interesting facts about this red velvet cake. 

Delicious, smooth and melts in the mouth, this type of cake comes with cream cheese frosting. 

To give the cake a dreamy red color, previously the bakers used to use non-Dutched, anthocyanin-rich cocoa. Which has rather recently been shifted to the usage of artificial food colouring. During World War 2, bakers used boiled beet juices to give the cake, a rich red colour. 

Also known as “Real Waldorf Cake", "Red Carpet Cake", "Red Mystery Cake" and flame cake, among its other popular names. 

The First Red Velvet was mentioned in a book called "The Joy of Cooking" by Irma S. Rombauer who was an author as well as a baker. 

Let’s now quickly dig into knowing how to bake this ruby delight in no time, literally! 

Ingredients For Cake Base 

2 cups granulated sugar fresh zest from 
2 medium oranges 
3 cups cake flour 
1 tablespoon natural unsweetened cocoa powder 
1 teaspoon espresso powder 
1 teaspoon baking powder 
1 teaspoon kosher salt 
1/2 cup unsalted butter, at room temperature 
1/2 cup vegetable oil 
2 tablespoons red food colouring 
2 1/2 teaspoons pure vanilla extract 
1/2 teaspoon Fiori di Sicilia extract 
3 large eggs, at room temperature 
1 1/2 cups buttermilk, at room temperature 
2 teaspoons distilled white vinegar 
1 teaspoon baking soda 

Ingredients For Cream Cheese Frosting 

10 ounces cream cheese, at room temperature 
1 cup unsalted butter, at room temperature 
1 1/2 teaspoons pure vanilla extract 
1/8 teaspoon kosher salt 
4 cups confectioner's sugar 

Instructions 

- Start by preheating the oven at 350 F. Grease the baking pan and keep it aside for the time being. 

- Now, take a bowl, add 2 cups of granulated sugar and some fresh zest obtained from 2 medium oranges. Spread it evenly, so that the mixture becomes fragrant. 

- Take another bowl and whisk 3 cups cake flour, 1 tablespoon natural unsweetened cocoa powder, 1 teaspoon espresso powder, 1 teaspoon baking powder, and 1 teaspoon kosher salt until well combined. Keep it aside. 

- Combine 1/2 cup unsalted butter and sugar. Beat it with an electric mixer on medium speed until light and fluffy, about 2 minutes. While this happens, combine 1/2 cup vegetable oil, 2 tablespoons red food colouring and 2 1/2 teaspoons pure vanilla extract. 

- Add extract and whisk all the mixture together. Set the mixer speed on some low- intensity stream into the oil mixture into the butter and sugar. 

- Once the oil has been added, turn the mixer speed to medium and continue beating for another 5 minutes, until the mixture is a very light and fluffy and vibrant pinkish colour. 

- Add 3 large eggs and be sure to use a rubber spatula to scrape down the sides of the bowl after addition. 

- Add the flour mixture to the eggs alternating with 1 1/2 cups buttermilk in two parts. Continue mixing until one or two flour streaks are left in the batter. 

- Combine 2 teaspoons distilled white vinegar with 1 teaspoon of vinegar. Then, quickly add it to the cake batter and mix for a minute or so. 

- Pour it in the preheated pan and bake it for 30 to 35 minutes. To check whether the cake is done or not, gently poke with a toothpick once the tops of the cake bounce back. 

- Once done, allow the cake to cool down for 20 minutes then carry on to prepare its frosting. 

For Frosting: 

- Take a bowl and mix 10 ounces cream cheese, 1 cup unsalted butter, 1 1/2 teaspoons pure vanilla extract, and 1/8 teaspoon kosher salt. Set the mixer at medium speed and beat for a minute or two. 

- Then set the mixer speed to the lowest setting and further add 4 cups confectioner's sugar all at once. Turn up the mixer speed to medium-high, beating for at least 5 minutes or until your frosting turns light and fluffy. Voila! Your creamy red velvet cake with toothsome frosting is ready to be relished!

Greek Yogurt Lemon Raspberry Jam Cookies Recipe


Cookies are absolutely amazing, but usually they are the worst thing to eat when you're trying to be healthy. They're mostly filled with sugar, saturated fats, and preservatives if you don't get fresh ones. These Greek yogurt lemon raspberry jam cookies are fabulously frugal and healthier to boot with fat and sugar significantly reduced. Even protein, fiber, and heart healthy fats are higher than normal thanks to the ingredient choices. Enjoy these sweet treats!

Preparation Time: 15-20 min

Cooking Time: 11 min

Ingredients 

- 1.5 cups almond meal 
- 1 teaspoon baking powder 
- 2 tablespoon non-fat Greek yogurt 
- 2 tablespoon honey 
- 2 large lemons juiced
- 1/2 cup granulated stevia extract 
- 1 cage free egg 
- 1 teaspoon ground flaxseed
- 1 teaspoon Chia seeds
- Raspberry Preserve

Instructions 

Cream the granulated stevia extract and egg together. Slowly add in your almond meal, baking powder, ground flaxseed, and Chia seeds. Then mix with Greek yogurt, honey, and lemon juice. Chill in the fridge for 30 minutes. When the batter is ready, roll into balls and drop onto baking sheet. Cook for 8 minutes and then take the sheet out. Stick your thumb into the middle of the cookie, fill with raspberry preserve and then cook for an additional 2-4 minutes. Love these delicious and nutritious sweet treats for dessert or with your breakfast!

Beat on medium speed for 1 minute. Spoon batter evenly into prepared muffin pans. Bake in a oven for 25 minutes or til a wooden toothpick comes out clean. Add pineapple slices and cherries on top if you desire. Cool on a wire rack for 5 minutes and enjoy these perfect pineapple muffins!

Dark Chocolate Coconut Bars Vegan Recipe (Gluten-Free)


Have a chocolate craving constantly calling you? Afraid that the chocolate you crave will derail your diet? Fear no more with this quick, healthy, and easy dark chocolate coconut treats recipe! And it's 100% vegan with agave nectar instead of honey! It's also a gluten-free option for your sweet tooth. 

Ingredients

Coconut Filling Ingredients: 

- 2 1/2 cups unsweetened coconut shredded 
- 1/2 cup melted coconut oil 
- 1/4 cup agave nectar
- 1 tsp vanilla extract 

Chocolate Topping Ingredients: 

- 8 ounces unsweetened dark chocolate (100% pure cacao) 
- 1 tablespoon coconut oil 
- 1/4 cup agave nectar

Add additional shredded coconut on top if desired!

Instructions

In a large mixing bowl, combine all of the recipe's coconut filling ingredients and mix together until well combined. Evenly divide up the filling between the 12 muffin cups, pressing it in very tightly, making sure it is even. Don’t worry they won’t stick. Place the muffin pan in the freezer make sure it is sitting flat, and freeze until hard, about 30 minutes. 

While the coconut filling is cooling, melt the dark chocolate with the coconut oil. In a double boiler setup on the stove top or in small increments in the microwave. After the chocolate and coconut oil is melted and whisked together and well combined, remove from the heat, and add in the agave nectar. Stir well to combine. Take the muffin tin with the frozen coconut mixture out of the freezer, and divide your chocolate mixture over it, spooning it on top and smoothing the chocolate out to make sure it totally covers the coconut. Put the muffin tin back into the freezer, and freeze until the chocolate has set, about another 30 minutes. Enjoy this fantastic frugal feast as you quash your chocolate cravings and keep your midsection lean!

Break out the brown cookie toffee layer bars. These tasty toffee treats will help calm those chocolate cravings!

Ingredients: 

Cookie Layer:

- 2-1/2 cups all-purpose flour 
- 1 teaspoon baking soda 
- 1 cup (2 sticks) unsalted butter, room temperature 
- 1 cup granulated sugar 
- 3/4 cup packed light brown sugar 
- 1 teaspoon salt 
- 1 tbsp vanilla extract 
- 2 eggs 
- 1 pack Toffee Heath Bar Bits 
- 1/2-1 cup semi-sweet chocolate chips 

Brownie Layer: 

- 1 box fudgy Brownie Mix + ingredients called for on box 
- 1/4 cup butterscotch caramel ice cream topping 

Instructions:

Preheat oven to 350 degrees. Mix together butter and sugars with electric mixer on medium speed until pale and fluffy, about 2 minutes. Reduce speed to low. Add vanilla and eggs; mix until well blended, about 1 minute. Mix in flour, baking soda, and salt. Stir in Toffee Heath Bar Bits and chocolate chips. Spread evenly into bottom of a 9×13 baking pan sprayed with nonstick cooking spray. Mix together brownie mix as directed on package, also adding in 1/4 cup of caramel topping.* Pour brownie batter over the cookie dough layer. Bake at 350 degrees F for 50-60 minutes. Allow to cool completely before cutting into bars. Love the toffee goodness!

Ingredients

- 14 graham crackers 
- 1 cup unsalted butter 
- 1 cup packed brown sugar

Instructions

Guiltless Blueberry Banana Protein Muffins

Enjoy these delicious guiltless blueberry banana protein muffins as a dessert or cheat food! 

Makes: 12 Muffins

Ingredients:
1.5 cups oat bran
6 egg whites
.5 cup canned pumpkin
.5 cups all natural unsweetened applesauce
1 tsp cinnamon
cap full of vanilla extract
1 scoop protein powder (preferably Vanilla)
1 cup granular Splenda
1 banana mashed
1.5 cups fresh or frozen blueberries

Instructions:
Preheat oven to 375 degrees, and prepare a muffin tin by spraying it with non-stick vegetable oil spray. Use paper muffin paper cups/liners. Combine applesauce, egg whites, pumpkin, banana and vanilla extract in a bowl and mix well with blender. Combine the dry ingredients in a separate bowl gently (don't crush the blueberries). Once both mixtures are thoroughly combined, add the dry ingredients to the wet gradually. Once incorporated, pour batter into the prepared muffin tin. Bake for 17-20 minutes at 375 degrees (or until toothpick comes out clean).

Approximate Nutritional Values: Calories: 80 Fat: 1.5 g, Carbs: 15 g, Protein: 7 g

Frugal Recipe: Christmas Sugar Cookies



Merry Christmas and Happy Holidays To All Of You From Frugal Fitness!! 
OK so Christmas cookies aren't exactly healthy, but at least the ingredients are simple and affordable! 
We all need a treat or a "cheat food" now and then after all! 
Enjoy these simple and delicious treats for Christmas or holiday celebrations! 
Maybe do an extra Frugal Workout afterwards as well :)


Christmas Sugar Cookies 

Ingredients:
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup granulated sugar
1 large egg
1 tsp pure vanilla extract
1/4 tsp kosher salt
1 3/4 cups all-purpose flour, spooned and leveled, plus more for the work surface

Instructions:
Line 2 baking sheets with parchment paper. Using an electric mixer, beat the butter and granulated sugar on medium-high until light and fluffy, 2 to 3 minutes. Beat in the egg, then the vanilla and salt. Reduce mixer speed to low and gradually add the flour, mixing until just combined (do not overmix). Shape into a 1-inch-thick disk, wrap in plastic wrap, and refrigerate for at least 2 hours and up to 3 days. Heat oven to 350° F. On a floured surface, roll the dough ¼ inch thick. Using lightly floured 2- to 3-inch cookie cutters, cut the dough into shapes, flouring the cutters and rerolling the scraps as necessary. Place 1 inch apart on the prepared baking sheets. Bake, rotating the baking sheets halfway through, until the edges just begin to brown, 12 to 15 minutes. (Mine took less, keep an eye on them.) Let cool slightly on the baking sheets, then transfer to a wire rack to cool completely.

Royal Icing

Ingredients:
4 cups powdered sugar (1 [1-pound] box)
2 egg whites, lightly beaten
2 tablespoons freshly squeezed lemon juice, plus more as needed

Instructions:
Combine ingredients in the bowl of a mixer fitted with a whisk attachment. Whisk on medium speed, stopping to scrape down the bowl, until glossy and stiff, about 5 minutes. Add additional lemon juice until the frosting is the desired consistency. Fill a piping bag or a resealable plastic bag with one corner snipped off and use to decorate cookies. (If not using immediately, place a piece of waxed paper or plastic wrap on the surface, cover in plastic wrap, and refrigerate until ready to use. Stir before using.)

What you’ll need:

8 ounces reduced-fat cream cheese (Neufchâtel), at room temperature
5 Tb confectioners’ sugar
2 tablespoons low-fat plain Greek yogurt
1/2 teaspoon vanilla extract
¼ cup crushed pineapple in juice, drained
Preparation:
Beat cream cheese, sugar, yogurt and vanilla in a mixing bowl until smooth. Add crushed pineapple and mix until well blended.
