I'm obsessed with peanut butter (and almond butter, but that's not nearly as frugal), and it's one of my daily go-to's for quick protein, heart healthy fats, fiber, and minerals. I usually add ground flaxseed, Chia seeds, 100% cocoa powder, and sometimes a pinch of cinnamon or pumpkin spice. Enjoy this frugal recipe!
Time Required: 5 minutes
Makes: 1 pint
Ingredients
- 16 oz of peanuts
- 3 tbsp of canola oil
- 1 tbsp of honey (or molasses or agave nectar for vegan option)
- 1 tablespoon ground flaxseed (optional)
- 1 tablespoon Chia Seeds (optional)
Instructions
In the bowl of a food processor fitted with the steel blade, whiz the peanuts until finely ground and beginning to get pasty. This may take a couple of minutes. Add oil and honey and pulse about 10 more times until completely incorporated. Taste for salt or sweetness and add salt or honey to taste. Put in a 1/2 pint mason jar or similarly sized container and store in the refrigerator. Enjoy the frugal feast!
