Frugal Healthy Recipe: Rainy Day Pizza

Contributed By Marissa Bognanno, Professional Chef & Zumba Instructor, and Author of The Boot Blog

Step 1: Find two friends you like, buy some ingredients and make sure it's raining.
Step 2: Make a really good whole wheat dough.
Step 3: While it rises, watch an episode of Downton.
Step 4: Roast some yellow peppers and cherry tomatoes in a hot oven (400 degrees) until soft.
Step 5: Stretch out the dough. Place your pan in the hot oven to get warmed up like a pizza stone.
Step 6: Top dough with cubes of mozzarella, freshly torn spinach, the roasted tomatoes and peppers, a drizzle of olive oil and a sprinkle of salt and pepper. Remark at the beauty of this step. Put pizza (gingerly) on super hot pan in oven and bake until golden underneath and bubbly on top.
Step 7: Rejoice! Say you're only going to have one piece and then have four.
