Homemade Fruit And Honey Yogurt Popsicles Recipe



Homemade popsicles for the kids and me.


Continuing with September as National Honey Month, I am celebrating the popsicle! I get tired of having to FIND ice cream with no preservatives or popsicles with no red # whatever in it and so I drooled over this recipe when I found it is a Strawberry Honey Frozen Yogurt Popsicle.
Or whatever type of fruit you want in it really, it is addicting!
The recipe is really flexible, it doesn’t mind what kind of fruit you use! It’s really quite simple to make and it freezes really fast.
After an evening in Florida in early September when it is still smoking hot while you’re playing frisbee, scootering and biking, these popsicles were an awesome finish to the day to cool off.

He was so excited he forgot to take his helmet off.
Here’s the recipe and I gotta say I have a little extra respect for it because it doubles as an amazing smoothie! I had to really stop myself from drinking it before I poured it into the little cups and ruining it for everyone! It was great after running around all day.

He was thinking “Will you ever just let me eat it or do you always have to take a picture.”

Do the same thing in the morning but don’t freeze it and don’t pour them in tiny cups, and keep it all to yourself and you’ve got a delish smoothie recipe too!

Greek Yogurt Lemon Raspberry Jam Cookies Recipe


Cookies are absolutely amazing, but usually they are the worst thing to eat when you're trying to be healthy. They're mostly filled with sugar, saturated fats, and preservatives if you don't get fresh ones. These Greek yogurt lemon raspberry jam cookies are fabulously frugal and healthier to boot with fat and sugar significantly reduced. Even protein, fiber, and heart healthy fats are higher than normal thanks to the ingredient choices. Enjoy these sweet treats!

Preparation Time: 15-20 min

Cooking Time: 11 min

Ingredients 

- 1.5 cups almond meal 
- 1 teaspoon baking powder 
- 2 tablespoon non-fat Greek yogurt 
- 2 tablespoon honey 
- 2 large lemons juiced
- 1/2 cup granulated stevia extract 
- 1 cage free egg 
- 1 teaspoon ground flaxseed
- 1 teaspoon Chia seeds
- Raspberry Preserve

Instructions 

Cream the granulated stevia extract and egg together. Slowly add in your almond meal, baking powder, ground flaxseed, and Chia seeds. Then mix with Greek yogurt, honey, and lemon juice. Chill in the fridge for 30 minutes. When the batter is ready, roll into balls and drop onto baking sheet. Cook for 8 minutes and then take the sheet out. Stick your thumb into the middle of the cookie, fill with raspberry preserve and then cook for an additional 2-4 minutes. Love these delicious and nutritious sweet treats for dessert or with your breakfast!

Frugal Snack: Turkey Pepperoni Pizza Dip



Enjoy this frugal tasty reduced fat turkey pepperoni pizza dip at all of your sports gatherings with minimal guilt! Sure I'd consider it a "cheat food", but it will be a fan favorite and one that won't ruin your week's progress if eaten in moderation.

Ingredients:
1 8 oz. Pk. Low Fat Cream Cheese
1/2 cup low fat dairy sour cream
1/8 tsp. garlic powder
1 tsp. oregano
1/8 tsp. crushed red pepper
1/2 cup pizza sauce
1/2 cup chopped or turkey pepperoni
1/4 cup sliced green onion
1/2 cup shredded low-fat mozzarella cheese
 
Instructions:
In a small mixing bowl beat together cream cheese, sour cream, oregano, garlic powder and red pepper. Spread evenly in 9 or 10 inch pie plate. Spread pizza sauce over the top. Sprinkle with pepperoni, green onion and green pepper. Bake in a 350 degree oven for 10 minutes. Top with mozzarella: bake 5 minutes more or until cheese is melted and mixture is heated through.

Strawberry Shortcake Shake

Ingredients:
1 Cup Skim Milk

Guiltless Blueberry Banana Protein Muffins

Enjoy these delicious guiltless blueberry banana protein muffins as a dessert or cheat food! 

Makes: 12 Muffins

Ingredients:
1.5 cups oat bran
6 egg whites
.5 cup canned pumpkin
.5 cups all natural unsweetened applesauce
1 tsp cinnamon
cap full of vanilla extract
1 scoop protein powder (preferably Vanilla)
1 cup granular Splenda
1 banana mashed
1.5 cups fresh or frozen blueberries

Instructions:
Preheat oven to 375 degrees, and prepare a muffin tin by spraying it with non-stick vegetable oil spray. Use paper muffin paper cups/liners. Combine applesauce, egg whites, pumpkin, banana and vanilla extract in a bowl and mix well with blender. Combine the dry ingredients in a separate bowl gently (don't crush the blueberries). Once both mixtures are thoroughly combined, add the dry ingredients to the wet gradually. Once incorporated, pour batter into the prepared muffin tin. Bake for 17-20 minutes at 375 degrees (or until toothpick comes out clean).

Approximate Nutritional Values: Calories: 80 Fat: 1.5 g, Carbs: 15 g, Protein: 7 g

Frugal Recipe: Christmas Sugar Cookies



Merry Christmas and Happy Holidays To All Of You From Frugal Fitness!! 
OK so Christmas cookies aren't exactly healthy, but at least the ingredients are simple and affordable! 
We all need a treat or a "cheat food" now and then after all! 
Enjoy these simple and delicious treats for Christmas or holiday celebrations! 
Maybe do an extra Frugal Workout afterwards as well :)


Christmas Sugar Cookies 

Ingredients:
1/2 cup (1 stick) unsalted butter, room temperature
1/2 cup granulated sugar
1 large egg
1 tsp pure vanilla extract
1/4 tsp kosher salt
1 3/4 cups all-purpose flour, spooned and leveled, plus more for the work surface

Instructions:
Line 2 baking sheets with parchment paper. Using an electric mixer, beat the butter and granulated sugar on medium-high until light and fluffy, 2 to 3 minutes. Beat in the egg, then the vanilla and salt. Reduce mixer speed to low and gradually add the flour, mixing until just combined (do not overmix). Shape into a 1-inch-thick disk, wrap in plastic wrap, and refrigerate for at least 2 hours and up to 3 days. Heat oven to 350° F. On a floured surface, roll the dough ¼ inch thick. Using lightly floured 2- to 3-inch cookie cutters, cut the dough into shapes, flouring the cutters and rerolling the scraps as necessary. Place 1 inch apart on the prepared baking sheets. Bake, rotating the baking sheets halfway through, until the edges just begin to brown, 12 to 15 minutes. (Mine took less, keep an eye on them.) Let cool slightly on the baking sheets, then transfer to a wire rack to cool completely.

Royal Icing

Ingredients:
4 cups powdered sugar (1 [1-pound] box)
2 egg whites, lightly beaten
2 tablespoons freshly squeezed lemon juice, plus more as needed

Instructions:
Combine ingredients in the bowl of a mixer fitted with a whisk attachment. Whisk on medium speed, stopping to scrape down the bowl, until glossy and stiff, about 5 minutes. Add additional lemon juice until the frosting is the desired consistency. Fill a piping bag or a resealable plastic bag with one corner snipped off and use to decorate cookies. (If not using immediately, place a piece of waxed paper or plastic wrap on the surface, cover in plastic wrap, and refrigerate until ready to use. Stir before using.)

Salty & Seedy Chocolate Bark Recipe

A couple times a week I teach English for ten hours straight, with a Zumba class in between. It is on those days that I must arm myself with an arsenal of energizing (and comforting) snacks, like this bark. This week, it got me through eight hours of teaching Little Red Riding Hood at school (my wolf voice is pretty awesome now) and countless hours of I am, you are, he is, she is, it is, etc. during my private lessons. Here's the thing though, I'd be lying if I said my job wasn't fun. Obviously there are times when I'm annoyed, tired and sick of the repetition, when I just want an adult job with benefits, or a nice relaxing one at a desk. But then the next minute I'm dancing to Barbie Girl with a third grader while her mom's in the kitchen making us hot chocolate. And I wouldn't trade that for anything. Not even a 401K or rich real estate.


Salty & Seedy Chocolate Bark

Ingredients:

6 oz. dark chocolate, chopped
1/4 cup almonds
1 1/2 tbs sunflower seeds
1/4 tsp salt

Instructions:

In a pan over medium high heat, toast the almonds and the sunflower seeds, stirring constantly for about a minute. Set aside in a bowl and sprinkle with the salt. In the same pan, melt the chocolate. Pour it onto a sheet pan covered with parchment paper and spread. (It won’t cover entirely.) Sprinkle with the almond, seed and salt mixture. Let cool for at least two hours and break into pieces. Store in an airtight container. Enjoy the delicious and nutritious homemade recipe!


I'm all about the simple pleasures in life, and at work, so there's nothing that a little bark can't fix; a disagreement with a co-worker, an impending deadline, a dreary day. Pack some healthy nutritious bark next week and see how it can help. Hey, if it can get me through doing a wolf voice for hours, then consider it magical!

FRUGAL FEASTY: Epic Superbowl Buffalo Chicken Bites & Blue Cheese Dip

It's a mixed bag of emotions. Tom Brady and the Patriots won't be in this year's Superbowl, but you can at least eat these amazing appetizers!!





For those football parties you may or not be attending/throwing,  try making this HEALTHY Buffalo Chicken Wings and Blue Cheese Dip recipe  for Superbowl 2013.
Ingredients:
5 pieces of chicken breast
2 cups bread crumbs
1 tbsp cayenne pepper
1/2 tsp chili powder
1/2 tsp salt
5 tbsp hot sauce (I used Frank’s)
Instructions:
Cut the chicken breasts into bite sized nuggets, and set aside. Mix breadcrumbs, cayenne, chili, and salt in a larger bowl and coat chicken pieces in this mixture. Place chicken pieces on a cookie sheet and cook for 15-20 minutes or until fully cooked. I like to turn the chicken over halfway through, through the pieces are small enough to just let cook.
When chicken is done, toss with hot sauce in a large bowl. If you want it to be crispy, you can put the bites back into the oven on high broil for 2-3 minutes. Serve with dip (below).
Meanwhile make the Blue Cheese Dip: Typically, this dip is SO bad for you, alas I have created a super healthy version for your enjoyment.
Blue Cheese Dip:
1 cup cottage cheese
1 6oz cup of plain greek yogurt
3 tbsp blue cheese crumbles (then an additional 3-5 tbsp to use later)
2 tbsp white vinegar
1/2 tsp salt
Instructions:
Use a food processor to blend all ingredients aside from the additional blue cheese. Blend well. Place in a serving bowl and add the additional blue cheese.

Frugal Recipe: Hot Chocolate Sticks!

Tell me, dear friends, what could be more comforting on a rainy day than pure chocolate melted in your morning cup? A stocking stuffer that I’ve been keeping stashed away (aka, hidden from Manu) these hot chocolate sticks were just begging to be used today. It’s a cube of glorious Beligian chocolate on a stick that you stir into a cup of hot milk. I mean...why didn’t I think of that?

 No hot chocolate sticks at home? Just drop a good-sized cube of chocolate in a cup of warm milk and stir.
I can't think of a better start to the weekend than this! Finally some actual, concrete wedding planning awaits us! Plus, I found out how to stream Downton so I’ll most likely be glued to it with a cup of this hot chocolate tomorrow. (And by most likely I intend “most definitely.”) Buon weekend, amici!

Frugal Recipe: Pecan Crust Pumpkin Pie

Fall is my all time favorite season for food eating. That being said, it’s the easiest season to gain 100 pounds in one day. Exaggerations aside, I sought out to create a  healthy pumpkin pie that still tastes good. And I think I’ve finally done it…….  for now.
Pecan Crust Pumpkin Pie (no flour, sugar, or butter!)
Crust: 
2 1/4 cups pecans (chopped very finely in a food processor)
7 dates
1/4 cup  dried cranberries
1 tbs cinnamon
1/2 tsp vanilla
1/4 tsp  of sea salt.
2 tbs water
Directions:
  1. Use a food processor to crush the pecans to a fine flour, add the remaining ingredients and mix well in blender until the mixture starts to ball together.
2. This is what the pecans/dates look like when they’re all up in your food processor.I mix everything in the food  processor and then plop it right into  a greased 9 inch pie pan, and bake for 10 minutes at 400 degrees.
Filling:
 1 can pumpkin puree
1 tbs cinnamon
1/2 tps ginger
1/4 tsp cloves
1/4 tsp nutmeg
1  cup milk (any kind you want)
2/3 cup almond flour (optional see below: I love almonds & wanted a thicker texture- however you can leave it out if you want)
4-5 dates
1/4 cup honey or maple syrup (you can also leave this out)
2 eggs
1 egg white
Directions:
  1. Mix all filling ingredients together with a blender.
  2. Fill pie pan and place back in 350 degree oven for 40 minutes or until toothpick comes out clean. Let cool and refrigerate for best taste.
