As of late, when I feel that craving coming on at around 11 am, 4 pm and long after dinner, I reach for these baked apple chips. And, wow, I never would have thought they would be so satisfying. It's like that hour in the oven while they're drying up, all of that gorgeous apple flavor gets concentrated into the chip. The crispy, sweet edges are bliss, and I think I need to just go to the kitchen for a second and bring a little plate of them over here right now...
Baked Apple Chips
2 apples (makes about 30 chips)
1 tablespoon light brown sugar
1/4 teaspoon cinnamon
Preheat the oven to 200 degrees. Slice the apples into uniform circles using a knife or a mandoline. Cut out the parts of the core from the centers. Sprinkle with the cinnamon and sugar mixture. Bake for 30 minutes (20 if they're already starting to brown) and flip over. Bake for another 30 (or 20 if they're thin and browning) on the other side.
