Frugal Food: Homemade Almond Milk



Making your own almond milk is a breeze. (Pun intended!) Just soak the almonds overnight, blend with water, strain with a cloth over a jar, and refrigerate. 

Step One: Soak the almonds.
Step Two: Blend!
Step Three: When the magic happens.

Step Four: Pour into a cheesecloth (or dishcloth in my case) and squeeze.


Step Five: Use reserved almond pulp to put in things!

Homemade Almond Milk Recipe

Ingredients:
Water for soaking
1 cup raw almonds (skin on or off, it’s your choice)
3 cups water 
Sweetener of your choice (optional)

Instructions:
Cover the almonds with about an inch of water and soak overnight or up to two days. Drain and place in blender with 3 cups water (2 if you like it thicker) and sweetener if using. Blend for two minutes or until the mixture is white like milk. Pour over a bowl covered with a cheesecloth or thin dishcloth. Squeeze out all the milk from the pulp by holding the cloth tight around your hands. Pour into a container and enjoy! Can be stored up to two days in the fridge. (The leftover almond meal can be added to oatmeal, smoothies, and muffins as it is. You can also spread it out on a baking sheet and bake it in a low oven until completely dry (2-3 hours). Dry almond meal can be kept frozen for several months and used in baked goods.)

Frugal Recipe: Power-Packed Paleo Pancakes

As my friend Jack Johnson sings about making banana pancakes and pretending like it’s the weekend,
… break it down, paleo style-
Ingredients:
1 mushed ripe banana
1 egg white
1/3 cup almond flour
1/2 cup blueberries
1 tbsp vanilla protein drink (or almond milk will work great as well)
 What To Do:
1. Beat mashed banana with egg white with a fork. Add almond flour and mix. It’s ok if it looks a little chunky.
Add almond flour
2. Add protein drink (or almond milk) and blueberries. Mix.
Add blueberries
3.  Coat the pan with some Pam or a little butter.  Pour about 1/3 cup on the pan on low heat and cook until the outer edges start to bubble a little then flip over and cook through.
Enjoy!
Pour a little agave, honey, or maple syrup on top, add some fruit, and MANGIA!

Frugal Healthy Recipe: Baked Apple Chips

Though I try to follow the Italian rules of staying slim, number 1, the one about not snacking, is the hardest for me. I can’t help it, I’m just an American snacker at heart! Favorite snacks include: apple slices with a splash of lemon (try it, it’s so very good) these Italian fiber-liscious cookies, oats and raisins and cinnamon all mixed up in a little bowl, my favorite popcorn, and more. As you can see, I try to at least keep the snack attacks healthy.

As of late, when I feel that craving coming on at around 11 am, 4 pm and long after dinner, I reach for these baked apple chips. And, wow, I never would have thought they would be so satisfying. It's like that hour in the oven while they're drying up, all of that gorgeous apple flavor gets concentrated into the chip. The crispy, sweet edges are bliss, and I think I need to just go to the kitchen for a second and bring a little plate of them over here right now...

Baked Apple Chips
2 apples (makes about 30 chips)
1 tablespoon light brown sugar
1/4 teaspoon cinnamon

Preheat the oven to 200 degrees. Slice the apples into uniform circles using a knife or a mandoline. Cut out the parts of the core from the centers. Sprinkle with the cinnamon and sugar mixture. Bake for 30 minutes (20 if they're already starting to brown) and flip over. Bake for another 30 (or 20 if they're thin and browning) on the other side.

Frugal Healthy Recipe: Broccoli Rabe w/ Pasta

Le cime di rape are similar to our broccoli rabe, only here they are very bitter and much leafier. Le rape are fundamental to the winter diet here in Barletta, and during the months of November through February, you can find them prepared in various ways in every kitchen. I like the traditional pasta dish but you can also sautè them, bake them, put them on crostini or serve them with shellfish.


First, get at least two kilos from your local grocer to serve three people. (They shrink down a lot.) 

Second, clean the stalks by removing the bigger leaves and leaving the smaller, tender leaves along with the broccoletti. 



Next, boil a pot of abundantly salted water and drop in your cime di rape. Let them boil for about ten minutes and then add in the pasta. Traditionally used are orecchiette, spaghetti or tripoline which are my favorite; they are like fettuccine with one curly lasagna-like side.

Drain the pasta and the cime together and plate them with a splash of extra virgin olive oil and grate some fresh black pepper on top. No cheese allowed according to tradition, "it doesn't marry well," they say.

Frugal Cheat Food Recipe: Nectarine Cake

It took me so long to convert this Italian recipe into US measurements that I suddenly felt the pain that Julia Child must have had while writing Mastering the Art of French Cooking. Cups are total nonsense, why can’t we just weigh our flour on a little scale like the Europeans do? Alas, these are questions that will never be answered. (Manu’s dad still cracks up when I tell him I am 5 feet and 5 inches tall. In Italian they say “thumbs” for inches. “Feet and thumbs!” He howls with laughter.) 

That being said, this cake is delicious. 

Nectarines seem to be in season now, as I’ve seen them at almost every fruit vendor in the center of town. Though the ones I bought were hard, they turned out to be deceptively sweet and juicy. Dust some powdered sugar on top before serving, with some good tea, and you have yourself an impressive, “Look how domestic I am!” dessert for company.




Nectarine Cake 
(Inspired by Benedetta Parodi's "La mia torta di mele")

2 big nectarines
2 egg yolks
3/4 cup granulated sugar (150 grams)
3 1/2 tbs butter (50 grams)
1/2 cup milk
1 1/4 cups flour (180 grams)
1 tsp baking powder
salt

Preheat the oven to 350 degrees. Beat the yolks with the sugar. Melt the butter and add half of it to the eggs. Add the milk, flour and baking powder plus a pinch of salt. Mix until combined. Pour into your baking dish (I covered my dish with parchment first). In the meantime, slice the nectarines into thin half moon slices that you can press into the batter so that only the top skin part shows. (Does that make sense? Look at the photos and you’ll see what I mean.) Before putting the cake in the oven pour the rest of the melted butter on top and sprinkle with about a teaspoon of sugar. Bake for 30 minutes or until it looks golden on top. Buon appetito & Share on Reddit! :)

Grilled Hoisin-Marinated Butterflied Leg of Lamb

Prep Time: 20 Minutes
Cooking Time: Using a oven thermometer, about 5 minutes per pound for medium rare. Check for internal temperature of 140-150 degrees at the thickest part of the meat. About 30-40 minutes depending on how hot your grill is.

Marinade
1 bottle cup of hoisin sauce*
5 tablespoon of rice vinegar*
4 tablespoon, lite, regular, gluten free, soy sauce*
2 tablespoons of chopped garlic
1/4 cup chopped scallion (white and green)
3 tablespoon of honey
6 1/2 – 7 1/2 lb of boneless leg of lamb

*Can found in the asian isle at most supermarkets.

Mix all ingredients and pour evenly 3/4 of the mixture over leg of lamb and marinade for at least for 4 hours. It is best to marinade overnight. Save the 1/4 of marinade to be cooked until slightly thicken to be served along with the cooked meat. Cool meat for 15 minutes before slicing.

Serve with white/brown rice, vegetable and salad.
