Serves 4
Salad Ingredients:
4 cups of mixed spring greens, washed and dried
2 Florida grapefruit, peeled and sectioned
2 Florida oranges, peeled and sectioned
1/2 cup sliced strawberries

For Raspberry Vinaigrette:
2 tablespoons Florida grapefruit juice
2 tablespoons raspberry vinegar
4 tablespoons extra virgin olive oil

For the Salad, in a large salad bowl combine mixed greens, grapefruit sections, orange sections, and strawberries.

For the Raspberry Vinaigrette, in a small bowl whisk together grapefruit juice and vinegar. Slowly whisk in oil, whisking until emulsified. Season with salt and pepper to taste. Drizzle over salad; toss to coat. Serve immediately.

You could add avocado, red onion, toasted almonds or pistachios, crumbled goat cheese or feta. You could also add Dijon mustard to the dressing.
