Who doesn't love a good hearty and healthy soup? This one for chilled squash and carrot soup will be one of your new favorites I assure you! It will warm you up and it's rich in vitamins, antioxidants, and fiber!
Ingredients:
- 1-1/2 pounds butternut squash, peeled, seeded, and cubed
- 1 can vegetable or chicken broth
- 2 medium carrots, sliced
- 1 medium chopped onion
- 1/4 tsp. salt
- 1/2 cup fat-free evaporated milk
- 3 tbsp. fat-free sour cream optional
Instructions:
In a large saucepan, combine the squash, broth, carrots, onion, and salt. Bring to a boil. Reduce heat; cover and simmer 15-20 minutes or until vegetables are very tender. Remove from heat; cool. In a blender or food processor, puree squash mixture in batches. Transfer to a bowl, stir in evaporated milk. Cover and chill until serving. Garnish with sour cream, if desired. Enjoy the clean healthy eating!
