Who doesn't love chicken and rice soup? It's quick, hot, delicious, cheap, and pretty healthy (especially if you opt for brown rice instead of white rice). Your soul and your svelte self will love this chicken soup!
Ingredients
- 1 tablespoon extra-virgin olive oil
- 2 garlic cloves, minced
- 2 carrots sliced
- 2 sliced celery
- dried thyme dried green pepper
- dried purple onion, diced
- 1 bay leaf
- 5 cups water
- 2 quarts low sodium chicken stock
- 1 cup long grain white rice or brown rice
- 4-8 oz grilled chicken breast strips cut into small pieces
- 1 tablespoon ground flaxseed
- 1 tablespoon Chia seeds
- Garlic salt and freshly ground black pepper to taste
Instructions
Place a soup pot over medium heat and add the olive oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned. Pour in the chicken broth and water- bring the liquid to a boil. Add in the rice and grilled chicken breast; season with salt and pepper. Cook on medium-low until the rice is tender-about 30 minutes. Serve hot (obviously) and enjoy this super soup!
