Delicious Ramadan Recipes You Should Definitely Try

Ramadan is a time for eating right and healthy. In order to keep you going through the fast without feeling feeble and exhausted, you need to choose a balanced diet to replenish your energy levels at Iftaar, and Suhour. Try to build an eating plan with sensible quantities of nutritious food; it will be more productive to use a Ramadan planner. Here are a few new mouthwatering that you should give a try this Ramadan and treat your taste buds with something new. 

Chicken Cacciatore 

An Italian classic dish, easy to make, Chicken Cacciatore is basically a hunter style dish prepared from chicken or rabbit, onions, herbs, tomatoes, and bell peppers. It is a fulfilling recipe with the most delicious sauce and full of incredible flavors. 

Firstly, dust the chicken with a little flour and then season it with salt and pepper. In a large skillet, fry the chicken pieces in oil and butter until golden brown. Remove it onto a platter. Add the vegetables mainly onion, garlic, bell pepper, tomato, mushrooms, and herbs. Sauté for five minutes or until vegetables soften. Next, add in the tomato paste, chicken stock (if you want), vinegar and water for the sauce. 

Mix in the seasonings; pepper, salt, turmeric, dried oregano, chili flakes, and crushed tomatoes. You can always change the ingredients according to your liking. Bring to a boil for a minimum of 5-7 minutes, and bring the chicken back to the stove. Allow it to simmer for some time and then reduce the heat. 

Chicken cacciatore can be served with a dozen of options. Serve over pasta and sprinkle parmesan cheese. Garnish with chopped basil leaves or parsley. If you want, you can always bake the pasta. Leave the chicken a bit uncooked and then add over the pasta, sprinkle it with mozzarella cheese and bake in the oven. Another side dish is rice. Pour the sauce over the rice evenly and there you go. 

For low carbohydrates, you can replace your sautéed veggies for steamed ones. Zucchini noodles and cauliflower rice are also low in carbohydrates. 

Ginger Chicken With Fried Veggies 

An easy to prepare the dish, Ginger Chicken is a hearty and delicious meal. Consuming only a little time from your busy schedule and leaving you with a wonderful outcome. 

The specialty of this dish is its stir fry sauce. You can either use fish sauce or oyster sauce. Firstly, prepare your sauce by mixing together honey, soy sauce, vinegar, corn flour, and the fish or oyster sauce. Whisk the ingredients over low heat until thickened. If you want to add in a bit of spice, throw in chili flakes or pour some chili sauce when the sauce cools down. 

Next, stir fry your vegetables. Heat olive oil in a large skillet and put some garlic and onion. Also, add some ginger and toss and turn over till it gives off its scent. Now, add small chopped pieces of chicken and cook for a while. Mix in your veggies, preferably, onion, bell peppers, broccoli, carrots, corn, and peas. 

Cook until the chicken pieces turn golden brown and the veggies turn crispy but not too hard. Lastly, pour the sauce evenly over all the ingredients. Make sure to turn the heat to a minimum at this point. Turn off the flame as soon as the chicken and other ingredients have been coated with the sauce. If you want, you can also pour the sauce after removing the chicken from the skillet. 

Squeeze some lime juice when done to enhance the flavors. 

Although chicken ginger itself is a complete meal, it can still be served with side dishes. Potato wedges, crusty garlic bread and sometimes rice too. Milkshakes top off the dish in an amazing way. 

Creamy Mushroom Soup 

A soup offering a wonderful aroma and rich, creamy texture, Mushroom Soup is a must at a dinner table. Easy to prepare and loved by all, this soup contains the best deep earthy flavors. Full of a variety of flavors like garlic, onions, and herbs which are subtle enough to enhance the natural flavor of mushrooms without overpowering it, this soup is a relish. 

Start the recipe by heating oil in a large pot. Sauté the onions for a minute or two and cook the garlic until fragrant. Put it aside. Next, cook your mushrooms in butter with a pinch of salt. Keep the heat to a medium. Wait until they give off their juices and reduce the heat. Let the juice evaporate and transfer them to the pot when they turn golden brown. Mix onion and mushrooms and cook for 5 minutes. 

Sprinkle the mushrooms with flour, mix well and cook for a while. Put in the chicken stock and put the flame on low. Cover the pot and allow it to simmer for 15-20 minutes. Occasionally stir the mixture, until thickened. Stir in the cream, to give it a delightfully smooth and creamy texture. Allow it to gently simmer. Make sure not o boil it. Adjust salt and pepper to suit your taste. Lastly, garnish with thyme leaves or parsley.

Chicken Stew With Herb Dumplings Recipe


Chicken soup, or chicken stew in this case, is a hot and delicious staple that can be a healthy and lean meal option if done correctly. Homemade is usually better than from a can because you have full control over the ingredients and can include higher quality fresh choices. Enjoy this hot and delicious chicken stew with herb dumplings today!

Ingredients 

Soup:

- 2 cups chopped carrots 
- 1/2 cup chopped onion 
- 1/2 cup sliced celery 
- 1/4 cup or less diced green peppers 
- 2 cans of chicken stock 
- 1/2 cup peas
- 1/2 cup all-purpose flour 
- 1 cup filtered water 
- 3 boneless skinless chicken breast, cut in half 
- 1 teaspoon dried basil leaves 
- 3/4 teaspoon dried rosemary 
- 1/4 teaspoon dried tarragon 
- 1 teaspoon salt to taste
- 1/4 teaspoon black pepper 
- 1 teaspoon chia seeds 
- 1 teaspoon ground flaxseed 

Herb Dumplings: 

- 2 cup biscuit mix 
- 1/2 teaspoon dried basil leaves 
- 1/2 teaspoon dried rosemary 
- 1/3 teaspoon dried tarragon 
- 2/3 cup low fat milk or unsweetened soy milk 

Instructions

Soup:

Layer the chicken breasts along the bottom of a slow cooker. Layer on top the carrots, onion, green peppers and celery. Next add all the spices, leaving out the flour. Stir in chicken broth. Cover and cook on high 3 hours. Stir flour in 1 cup of water until smooth. Stir into slow cooker. Cover and cook 1 hour or until vegetables are tender and chicken is no longer pink. 

Herb Dumplings:

Combine biscuit mix and herbs in small bowl. Stir in milk to form soft dough. Spoon dumpling mixture on top of stew with a scoop or spoon. Cook, uncovered, 30 minutes. Cover and cook 30 to 45 minutes or until dumplings are firm and fantastic. Enjoy this super soup!!

Easy + Healthy Chicken & Rice Soup Recipe


Who doesn't love chicken and rice soup? It's quick, hot, delicious, cheap, and pretty healthy (especially if you opt for brown rice instead of white rice). Your soul and your svelte self will love this chicken soup! 

Ingredients

- 1 tablespoon extra-virgin olive oil 
- 2 garlic cloves, minced 
- 2 carrots sliced
- 2 sliced celery
- dried thyme dried green pepper 
- dried purple onion, diced 
- 1 bay leaf  
- 5 cups water 
- 2 quarts low sodium chicken stock
- 1 cup long grain white rice or brown rice
- 4-8 oz grilled chicken breast strips cut into small pieces
- 1 tablespoon ground flaxseed
- 1 tablespoon Chia seeds
- Garlic salt and freshly ground black pepper to taste 

Instructions 

Place a soup pot over medium heat and add the olive oil. Add the onion, garlic, carrots, celery, thyme and bay leaf. Cook and stir for about 6 minutes, until the vegetables are softened but not browned. Pour in the chicken broth and water- bring the liquid to a boil. Add in the rice and grilled chicken breast; season with salt and pepper. Cook on medium-low until the rice is tender-about 30 minutes. Serve hot (obviously) and enjoy this super soup!

How To Quickly Improve The Nutritional Value Of Your Canned Soup


If you're like me, nothing is better than a nice hot bowl of soup on a cold day. Unfortunately soup usually falls into 3 categories that don't fully fit the frugal fitness theme:

1) Soup is unhealthy (example: clam chowder or lobster bisque)
2) Soup is mediocre in terms of nutrition (example: Campbell's)
3) Soup time-consuming or expensive ingredients (ex: homemade)

OK so the 3rd one is a little bit about being lazy. But healthy homemade soup can be time-intensive (and time is money) and possibly expensive depending on the fresh ingredients you purchase. In a perfect world we'd all make our soup from scratch with healthy and affordable ingredients. But I'm also a busy businessman and a realist. Not many people reading this or people out there in general are going to opt for the homemade soup option.

So when I don't have the time to make it from scratch I have a little hack. I take a moderately healthy Progresso soup and add some quick and healthy ingredients. It takes the soup from a C+ in terms of nutrition to about a B+ or A-. I personally enjoy Progresso's Herb Chicken & Dumplings which has an OK nutritional content compared to other soups, but OK just doesn't cut it. Here are the quick but healthy items I add in about 1 minute:

- Several leaves of spinach, shredded
- 3 pieces of Purdue grilled chicken strips
- 3 TBSP quinoa (if you're already making it for other meals)
- 1 TBSP ground flaxseed
- 1 TSP garlic powder (to counteract the added bland ingredients)

There is plenty / too much salt already in an average can of Campbell's or Progresso soup so I think the sodium content actually is a little more normalized after adding these ingredients.

You can add dozens of other ingredients to improve the nutritional value of your soup on a budget, these are just ingredients that I enjoy that can benefit my fitness goals and ingredients that I always have around the house.

Frugal Recipe: Mighty Meat Stew!

It’s MARCH and the cold winter is (unfortunately) still here.  In hopes of improving my mood, I downed some Vitamin D and made this stew.  It’s simple, healthy, and hearty. Essentially you chop up some meat, veggies, pour in some broth, and cook it in the crockpot all day until you get home from work. Then you’ll have a delicious dinner just waiting for you to sit down and enjoy it.
Ingredients:
1 10 oz package of mushrooms, thickly sliced
1 chopped onion
3 celery stalks (chopped)
2 large carrots (chopped with skin on)
5 on the vine tomatoes (diced)
1 italian pepper (it’s light green in color)
1/2 pound of boneless pork loin
1 pound (or close to it- I used .8 pounds) sirloin beef tips
2-3 garlic cloves (finely chopped)
2 tbsp basil (dried basil or Mrs. Dash is fine)
1 tsp salt
1 tsp pepper
2 tbsp olive oil
Optional: splash of red wine
What To Do:
1. Sauté mushrooms and onions together in a little bit of oil and water. Set aside when cooked.

2. Chop the beef and pork into chunky pieces. Brown with garlic, basil (or Mrs.Dash), olive oil, and a splash of red wine.

3. Combine mushroom and onion mixture with meat, celery, carrots, beef broth, and tomatoes in a crockpot. Stir and let it cook it on low for 5-6  hours or high for 3-4 hours.

4. Add one box of beef broth and stir.

5. Add additional seasonings (salt, pepper, olive oil) to taste and Parmesan cheese on top. Mangia! (Eat in Italian)

Savory Black Bean & Sausage Soup

Nothing like a pot of hot soup on cold and snowy days! From my kitchen to yours.
Prep Time:30 minutes
Cooking Time:30-90 minutes
Serves:12 people easily

Soups are wonderful and they really don’t take a lot of time to make; most of the time is the actual cooking time. Most soups really do not require a recipe, just an inventory of what you have on hand and a little imagination. The base for all soups is a stock (chicken or beef or vegetable), celery, onion and carrots. Once you have your stock base, you can add just about anything. Feel free to add or subtract any ingredient to this recipe. Recipe can be halved.

Ingredients

2 16 oz cans of black beans*
2 16 oz cans of corn, drained, or 3 C frozen corn, or the kernels from 3 medium fresh ears of corn
6-8 links of either mild or hot pre-cooked chicken sausages, or vegetarian sausages
2 large stalks of celery, including leaves, chopped
1 medium onion, chopped
3 large or 4 medium carrots, peeled and sliced, or 4 oz (or half bag) baby carrots
10 C pre-made soup stock, chicken or vegetable **
5 C water
1 small bunch kale, washed and chopped, or ¼ 16 oz bag of chopped kale
1 8 oz can chopped tomato
1/3 C fresh cilantro, chopped
1-2 t of chili powder
1 t cumin powder
4-5 cloves garlic, chopped
1 t salt (omit salt if using sausages)
1 t ground black pepper
**You can also use other beans, such as red, cannelloni or navy. If you’d like to start with a bag of dried beans, use 1 16 oz bag of dry black beans, soaked overnight.
** To make homemade chicken stock, place 12 C water in a large soup pot with a 4-5 lb chicken (to eliminate fat, I take the skin off the chicken prior to putting it into the pot.) Bring to a boil, and then reduce heat to a simmer over low heat for 45-60 minutes.  Strain the stock into a bowl, cover, and let cool. Once cool place in the refrigerator. Fat will rise to the top of the cooled broth.  Remove the fat before using. The chicken meat from your stock can be used for another recipe, or add some to your soup.

Directions:

In a large stockpot, add beans, corn, sausage, celery, onion, carrots, stock, water, kale, tomato, cilantro, chili powder, cumin powder, garlic, salt and pepper. If you feel there is not enough liquid in the pot add an additional cup of stock or water.  Bring the contents of the pot to a boil over high heat.  Skim any form that comes to the surface and dispose. Turn heat down to low and simmer, covered for about 30-40 minutes. If you are using canned beans, cooking time is about 30 minutes. If you use dry beans, increase cooking time by another 30 minutes (60 minutes total.) Sample the soup to test for doneness.
For a little more bulk you may top soup with either white or brown rice. Once plated, you may also add more cilantro, and if you choose, some sliced avocado.

Frugal Recipe: Italian Tomato & Meatball Soup

Ohhhhhhh, boy oh boy oh boy oh boy. Do I have lots of yummy food (and recipes!) to share with you this morning. And if you follow me on Instagram, then you probably already know what I’m talking about.
Last night, I set out to make some homemade soup and bread. I’m sort of a fan of the whole soup and bread combo, but I decided to switch things up a bit from the usual soup rotation.

While I was at the store earlier this week, I happened to notice that extra lean ground beef was on sale, so I picked up a pound of it, still not quite sure what I was going to do with it. Jay’s always happy when there’s actual beef in the house, so I knew I couldn’t really lose either way. Winking smile
So I started browsing through some of my cookbooks and wound up coming across a recipe for a tomato type of soup…with meatballs. I mean, how fun does THAT sound?

One of the best parts about this soup is that it unbelievably easy. Once you’ve got the meatballs made, the soup will literally take you less than 15 minutes to prepare. I was actually a little leery of the very basic ingredient list, unsure of whether or not it would turn out super bland.

But I guess last night was my lucky night because this soup turned out anything BUT bland. WOOT!
