Ingredients
- 1 tablespoon olive oil
- 2 diced carrots
- 2 diced celery sticks
- 2 leeks finely sliced
- Can of chopped tomatoes
- Two finely chopped garlic cloves
- Fish or vegetable stock
- Fish fillet chopped
- Garlic salt if desired
- 1 teaspoon Chia seeds
- 1 teaspoon ground flaxseed
- top with additional greens and spices
Directions
Heat the oil in a pan and sauté the carrots, garlic and celery for 5 minutes. Pour in the tomatoes, leeks and stock and bring the pot to a boil. Lower the temperature, cover the pot and simmer for 15 minutes until the vegetables are almost ready. Add the fish and cook for seven minutes more. Season the soup with garlic salt and top with additional spices and greens as desired. Serve the soup with slices of homemade bread to balance the spice. Dipping is encouraged!
