The Best And Most Unique American Caviar

best most unique american caviar frugal fish eggs

If you are an avid caviar eater and already enjoy the best Beluga, Sevruga and Oscietra caviar we have a fun challenge for you. Try branching outside of your comfort zone and purchase one of the hundreds of different types of caviar We all know that the Caspian Sea caviar is the lightest and sweetest, but did you know that caviar is now distributed from Latin America, Bulgaria and of course the United States? Even more exciting is the fact that within each country there is a variety of sturgeon producing delicious caviar!

So let's jump into a quick review of these less-talked-about ikura, and you can start testing them out. We are going to focus on American caviar because they are inexpensive, and there are so many to choose from. All caviar in the United States is farmed in freshwater lakes and includes sturgeon caviar paddlefish caviar hackleback caviar whitefish caviar and salmon caviar.

Because Caspian Sea caviar demand was so high, the Caspian Beluga is now endangered so it is even harder to find it and the prices of Russian and Iranian caviar has sky-rocketed. The United States caviar industry has taken advantage of this and is doing a great job of filling demand and is doing so in an environmentally-friendly way with their seafood. They have also done a great job of matching the flavor and quality of the famous Caspian caviar while keeping the prices affordable.

The first American caviar that you must try is the Hackleback caviar, also known as American Sturgeon. This sturgeon lives in the Mississippi River, and its roe is small, black, melts in your mouth and leaves a wonderful aftertaste. This aftertaste is what differentiates it from other caviars, and it's great. If you are looking for caviar that tastes similar to the Caspian Osetra, look for the white sturgeon from California.

If you crave salty and juicy caviar, try some Salmon Caviar. This roe comes from the female salmon that can be found in the Pacific Northwest and Alaska. Its appearance is beautiful, with its bright and reddish color and it's usually used as a garnish. Another American caviar that is commonly used as a garnish is the Whitefish caviar. These eggs are very firm, golden in color and taste wonderful.

Finally, we can't talk about the Paddlefish caviar which out of all of the American caviars is the closest substitute to Sevruga. If you are not familiar with Sevruga, it is the most expensive sturgeon caviar from the Caspian Sea. The Paddlefish caviar is found in the Mississippi River, and its popularity is increasing quickly, so make sure you order some right away. Just like Sevruga, when you eat this caviar you will be amazed at its smooth and slightly salty flavor.

There are more American caviars, but these are a perfect start for anyone who is looking to branch out of their comfort zone or just looking for caviar that is not expensive. Enjoy testing these out, we sure do!

Budget-Friendly Blackened Salmon Recipe

Enjoy this Blackened Salmon recipe for lean protein and heart healthy fats!

Prep Time: 5 min
Cook Time: 8 min
Serving Size: 5

Ingredients

- 2 pounds of salmon filet cut into 4-8 ounce portions
- ¼ cup of dried oregano
- ¼ cup of dried basil
- 1/8 cup of dried parsley
- 2 tablespoon of dried thyme
- ¼-1/2 teaspoon of red hot pepper to taste
- salt and pepper to taste

Instructions

Sprinkle generously on both sides of fish. Store leftover spice in airtight bottle. Heat a large frying pan until it is very hot (about 3 minutes.) Pour olive oil to coat the bottom and wait another minute. Note: The pan should be smoking, if not, wait another minute. Be very careful, place fillets (away from you) in the pan. Cook each side about 4-8 minutes on high heat (depending how done you like it) with a lid tilted somewhat (keeps the oil from splattering all over your stove top.) Medium raw takes about 4 minutes each side. Do not move the fish during the cooking process or your fish will NOT be blackened. Flip fish over. Cook another 4 minutes; at the end of the 4 minutes you may cut the fish in half to check if done while in the pan. If it is too rare, add another minute or two. Again, keep your fish stationary. To plate, scoop some black bean stew on the bottom and add the fish on top. Garnish with parsley, tomatoes and slices of avocado and enjoy the lean protein!!

Fantastic Frugal Foods Part 6

Frugal Fitness Foods Salmon Affordable Diet Lean Paleo

Read PART 1 |  PART 2  |  PART 3
PART 4  |  PART 5

1.      Salmon

A little bit more expensive than most other items on the list, but Salmon provides an excellent source of complete proteins as well as a significant amount of Omega-3 Fatty Acids. Salmon is a phenomenal food, the only very minor shortcomings include its moderate cholesterol content and  that a large amount of salmon on the market come from fish farms. Choose Wild Alaskan Salmon if possible for the best nutritional value. Unfortunately, the highest quality of salmon is also usually the more expensive kind. If you find salmon for an excellent price, it is most likely the farmed salmon so make sure to double check the food label or the advertisement. Occasionally there are sales on salmon making it more affordable I have included a few salmon recipes later on in this book.

2.      Shrimp

Shrimp is an excellent source of almost pure protein. There is very low fat content, the only real downside is that it is very high in cholesterol. Shrimp gets a bad reputation sometimes because it is often accompanied with plates of pasta, rich creamy sauces, or plenty of tartar sauce. Buying shrimp when it is on sale or for special occasions is a good snack or meal that is high in protein and tastes great. At weddings and other formal events, I make sure to head right to the shrimp platter and stock up. Sometimes shrimp will go on sale, and some people eat small amounts of shrimp unlike myself, so I have included a few shrimp recipes later on in this book.

3.      Acai Berries

While I think acai berries have recently been touted a little too much as super-antioxidants, they are still excellent foods to add to your diet. While they might not cure all diseases and help you lose 20 lbs, they are worth buying if you have the extra money to spend. Acai berries aren’t sold in a lot of stores and the acai berry nutritional supplements are at least moderately expensive. There are countless acai berry supplements weight loss drinks but it is not conclusive whether these products give you the same benefits as the acai berries themselves. You are better off purchasing grapes, blueberries, or green tea instead of acai berries to get in your antioxidants if you are on a budget.

4.      Almonds/Almond Butter

Almonds are probably the best nut to snack on because of a very low percentage of saturated fat content and a lower carbohydrate content than most other nuts. Almonds are also very high in Vitamin E and other micronutrients. Almond butter is usually very expensive but it has a delicious sweet and toasty taste. Almonds are great as a snack or to add some healthy fat to a meal which is important to improve satiety and fat-soluble vitamin absorption. If almonds or almond butter are too expensive, natural peanut butter or plain peanuts are a good substitute. If you buy them in bulk and eat them slowly, a bag of almonds will last you a long time and provide you with several high quality snacks.

5.      Soy Milk

Unless you are lactose intolerant or vegan, I would recommend drinking skim milk instead because it is about 1/3 of the cost. That being said, soy milk is still very good for you and not outrageously priced. Soy is one of the only major plant sources of complete proteins which makes it crucial for vegetarians. It is good first thing in the morning or post-workout because it is quickly broken down and absorbed by the body. Soy also has healthy fats, no cholesterol, and provides heart healthy flavenoids that reduce cholesterol levels. Soymilk can be purchased in several delicious flavors with added sugar or in plain form with less sugar than milk. If you don’t drink regular milk, I’d highly recommend adding soy milk to your diet. Don’t bother purchasing much rice or almond milk since neither of them provide any significant protein.

Shrimp, Chicken, & Tofu + Lobster Sauce Epic Frugal Recipe Combo!

Contributed By Helen Chin Lui, Owner of Healing Place

Lobster Sauce is a type of sauce used in American-Chinese recipes. Lobster sauce is most commonly used as a sauce for the dish Shrimp with Lobster Sauce. You can substitute the shrimp with squid, any solid white fish and/or scallops. If you are adventurous you can combine 2 cups of various seafood,  i.e., ½ c cleaned, peeled, shrimp, 1 c of fish cut in 1” pieces, and a  1/2 cup of cleaned, sliced into rings, squid.
Most people believe that lobster sauce contains lobster meat. In fact there is no lobster in the lobster sauce. In Cantonese cuisine, the lobster sauce is poured over stir-fried lobster in the shell. In this type of lobster sauce there are eggs in this recipe.
The dish typically contains chicken broth or water to make the gravy, garlic, ginger, and fermented black beans. The sauce is thickened with cornstarch. For meat you may use either ground pork, ground chicken or ground turkey meat.

Prep Time: 30 minutes
Cooking Time: 30 minutes
Serves: 6-8
Recipe can be halved or doubled.
Ingredients
1 lb of either ground chicken, turkey or pork  meat
¾ lb of peeled, shrimp
1 lb of firm tofu, diced into 1″  chunks
1 medium, thinly, sliced, zucchini *
½ lb fresh string beans *
1 C fresh or frozen peas*
1 small, thinly sliced, onion
2 T oyster sauce**
2 T black bean and garlic sauce or paste**
3 chopped fine, fresh garlic
2 thin slices, finely chopped, ginger
2 C of canned or fresh chicken stock or water
¼ t of hot pepper flakes (optional)
3 T roux (mix 2 T of corn starch with 4 T of room temp water)
Oil for the skillet
*You may use up to 2 C of any combined vegetables, i.e. ½ string beans, 1 sliced yellow squash and 1 sliced zucchini. You may use any vegetables you have on hand.
**found in the Asian isle of market
Directions:
Note: To prevent overcooking, the vegetables, meat and shrimp are all cooked separately. Then all ingredients are put back into the pan to finish cooking together along with the tofu, oyster sauce and black bean and garlic paste. Then add chicken stock or water. Then add corn starch roux to  thicken to your liken.
In a large skillet, pour enough oil to cover the pan (about 3 T.) Heat over high heat until oil is hot. Add garlic, ginger and onion and cook until lightly browned (about 4-5 minutes). While stirring, add shrimp and cook until pink (keep garlic, ginger and onion in the pan.) Remove shrimp and set aside. Add ground meat and cook until done (about 3-4 mins.) Crumble meat so that there are no large lumps. Stir. Once cooked, remove and set aside. If you need more oil, add another tablespoon or 2, more garlic if you want, and sautéed vegetables until tender (about 5-7 minutes).
Stirring continuously, add the cooked chicken, shrimp, tofu, oyster sauce and black bean and garlic paste back into the pan. Add chicken stock. With a lid on, bring mixture to a boil. Take lid off, while stirring, add corn starch roux in a thin stream and pour enough roux to thickened the sauce to your liken. Continuously stir until gravy has thickened (about 3 minutes.) If the sauce is too thick add more stock or water (about 1-3 T) and if it is too thin add more roux and continuously stir over high heat until it is the right consistency.
Serve over white or brown rice.

Sole Food Soul Food! Fish FTW!

Contributed By Chef Amanda, Author of The Skinny Spice & Frugal Feasty Co-Host
I don’t know about you, but I question most online fish recipes.
Why?
a.) because it’s easy to mess up a fish dish
and
b.) fish tends to be expensive so it’s a shame to try a recipe only to find that it’s not so great or that you screwed up somehow.
I realize that this post is about to be very contradictory, given that I’m about to tell you how to make a fish recipe via the internet.
The difference here is that this a tried and true homemade creation. I can vouch for the fact that you pretty much can’t mess this one up, and it’s really good. I use sole, which is a white fish that doesn’t have a really ‘fishy’ taste to it. It’s stuffed with a shrimp, scallop, and crabmeat mixture which you can tailor to your specific seafood likes and dislikes.
Eating fish is a really important key to a healthy diet, and so I say go ahead and enjoy a different type of ‘SOLE’ food with this easy and satisfying recipe below.
Ingredients:
1 cup of Ritz crackers (crushed up)
5 pieces of sole (or however many you need to feed yourself/family)
¼ cup olive oil
3 jumbo scallops (diced)
5 raw wild caught jumbo shrimp (de-shelled, de-veined, and diced)
½ cup crabmeat
¼ cup olive oil
pinch of salt and black pepper
have a stick of butter out to use later
squeeze of lemon juice
**Make sure you have toothpicks**
What To Do:
1. Preheat oven to 375 degrees. Crush ritz crackers.
photo 1  Crush Ritz Crackers
2.  Prepare stuffing: Mix scallops, shrimp, crabmeat, olive oil, salt and pepper together in a large bowl.
Seafood Stuffing
3. Set yourself up to put the fish together. Place the crushed Ritz crackers in a bowl. Have a separate bowl with olive oil in it, and have the bowl with your seafood stuffing ready as well.
Set Up
4. For each piece of fish, first coat with olive oil, then cover in Ritz crackers, then lay place in 11×14 pan coated with Pam.
photo 5   Place Stuffing in Center
5. Place a heaping tablespoon of seafood mixture in the center of the piece of sole, then fold one side of the fish over the mixture and roll to the other side.
photo 4 Roll Roll  Roll
6. Put one slice of butter on top of each piece of fish. Not even a ½ of a tablespoon- smaller! (I also like to sprinkle the extra Ritz crumbs on top of the whole thing.) This is the only bad part for you, but it’s essential. Just deal with it.
Butter  Butter
7. Place a toothpick in the center to hold together when it cooks. I ran out of toothpicks, so  you should remember to get some unlike me.
8. Cover entire pan with aluminum foil. This will help it cook nicely. Place in oven and bake for 45 minutes. Take the foil off after 30 minutes of bake time.
Enjoy!

Frugal Recipe: Tilapia Tacos w/ Roasted Corn Relish

Contributed By Courtney Horan, Author of Sweet Tooth Sweet Life
I noticed that tilapia was on sale this week at Price Chopper, so I decided to grab a couple filets while shopping the other day and see what I could come up with. It then dawned on me that I still have a ton of corn tortillas leftover from when I tried out the scrambled egg tacos recipe, and that’s when things started to come together.
I did a little bit of searching around online, found a few recipes that caught my attention, put my own little spin on them and VOILA…
IMG_1118
We had ourselves some amazing Tilapia Tacos this evening.
IMG_1120
They were actually pretty easy to make and could even be done a lot quicker by taking care of some of the prep work ahead of time (i.e., chopping vegetables). Other than that, this recipe came together in a cinch, and WOW, was it full of flavor!
IMG_1123
As much as I loved the roasted corn relish topping, the seasoning on the tilapia was truly delicious; slightly spicy, yet slightly sweet, thanks to the addition of cinnamon. Yup, cinnamon. They.are.winners.
IMG_1121
This dinner, which was actually supposed to happen yesterday, was well worth the wait. If you wanted to, I’d suggest adding in some black beans, too. I’ll be doing that next time, as it was an afterthought for me this evening. Ahh well.
So what do ya think – do you see any fish tacos in your future now? Smile

Fried Grouper Sandwich & Baked Fish Recipes

Contributed By Christie O, Author of Average Moms Wear Capes

oceantotable
This week I’m sharing recipes that I used to make the fish we caught! Earlier this week I went deep sea fishing with my dad and we came home and immediately tore up the giant grouper we caught. That’s kind of our thing.
It’s pretty amazing when one minute you’re on the Gulf of Mexico reeling in a fish and the next, that same fish is on your dinner table. I almost can’t think about it that way, I almost feel bad and yes, it’s a little weird.
Except that it was soooo good.
So of course on the way home I was Googling a fried grouper sandwich recipe because down here we do fried grouper sandwiches. Our area of Clearwater and St. Pete is home to some of the best fried grouper sandwiches anywhere in the world. I can’t confirm that last part (I’ve never had grouper in any other part of the world)  but that’s what I hear anyways.
Not to worry, I don’t only have fried here, I also caught some snapper and made an amazing baked snapper that was to die for (you can substitute salmon for it, we made that too but we didn’t catch that one, we bought it.) By the way, I think my body was craving Omega 3′s from the amount of fish we ate this week. Which was fine with me! I’ll give you both recipes in this post, starting with the fried grouper sandwich adapted from this recipe I found online that copies a restaurant here in St. Pete Beach.
Next up! A healthy baked fish recipe! Because I feel the need to balance out the fried.
You can really swap out any fish in this recipe, I used the snapper I caught and I also made salmon this way too, both were delicious and both were HUGE HITS with the kids by the way. This recipe was adapted from a Pinterest recipe too.
