Reduced Fat & Protein Packed Vegan Macaroni Salad

Macaroni salad is a delicious staple for group dinners and barbecues across the country, but it isn't always the healthiest option... until now! I've reduced the fat content and added extra protein and fiber with a few simple healthy ingredient swaps and additions. And with vegan mayonnaise substitute in, it's a 100% vegan recipe as well! Now macaroni salad can realistically fit into your healthy meal plan program! Savor the flavor and maximize your muscle with this low fat and protein-packed frugal macaroni salad recipe!

Ingredients

- 1-2 tablespoon Vegan Mayonnaise
- 32 oz of Barilla Protein Plus macaroni 
- 1-2 cups diced dill pickles
- 1 cups diced carrots 
- 1 cups diced celery 
- 1-1/2 to 2 cups diced onions 
- 1 teaspoon Chia Seeds
- 1 teaspoon ground flaxseed
- 1 small-medium carrot grated
- 1 teaspoon chopped basil leaves
- 1 teaspoon chopped parsley leaves

Instructions

Prepare whole grain protein macaroni according to directions and refrigerate. Chop all vegetables and mix together. After the macaroni has cooled completely, mix the veggies in with the macaroni until thoroughly blended. Add vegan mayo until salad is sufficiently covered to desired effect. Refrigerate prior to serving.
