Recipe Ingredients:

2 cups carrots, cooked & mashed
1/2 cup Vegan I Can't Believe It's Not Butter softened
1 cup granulated stevia
1/2 cup olive oil
1/2 tablespoon cinnamon
1/4 teaspoon pumpkin spice
1 teaspoon ground flaxseed
1 tablespoon flour
1 teaspoon baking powder
1 teaspoon salt
1 cup light vanilla or unsweetened soy milk

Cooking Instructions:

Beat all ingredients together, combining until smooth. Pour into a 2-quart casserole dish and bake at 350 degrees for 45 mins. Enjoy this frugal gluten-free vegan sweet treat!

What Does A Candida Infection Look Like? 

This may be the first time you're hearing about the candida fungus in your body. These fungus species actually help to aid digestion and absorption from food. A little bit of candida can be helpful, but a lot can be dangerous. 

A candida infection can cause a number of painful or irritating symptoms. Common symptoms include nausea, bloating, or even chronic fatigue. The risk of developing skin issues or urinary tract infections both increase with a higher presence of candida. 

Such an infection can even have an effect on mental health, causing mood swings or the onset of depression. Not all forms of candida can provoke these symptoms. In fact, of the many varieties, there are only 15 species of candida that have the potential for infection. 

The most common troublemaker is Candida albicans, which is a variety that causes more than half of the known cases of infection. 


What Is The Candida Diet? 

Good question. If you're trying to avoid the above symptoms, it's helpful to limit the amount of fungus in your body. 

The candida diet creates a meal plan that excludes sugar, gluten, alcohol, and certain dairy products. These kinds of foods can actually help to increase or even grow fungus in your body. Instead of these substances, the candida diet encourages replacement with natural-sugar fruits, green vegetables, and foods that are gluten-free. 

That might sound pretty simple. But you're also probably curious to why certain foods are good or bad when it comes to candida overgrowth. 


What's The Benefit of Gluten Free?

The most common way to perform a cleanse is to drink only fluids for 48 hours. This serves to 'wash out' or 'clean out' your body of other things. Drinking water, juice, or broth is common while cleansing. 

Some people can't go that long without eating solid food. In this case, many cleanses are done by only eating vegetables for a given period of time. The most important aspect of a cleanse is the release of all negative influences on the body. You want to flush them out. 

You must be careful when performing a cleanse. While it can be good for your digestive system, some people feel fatigued, headaches, or irritability due to low caloric intake. Ensure that you're still providing your body with proper nutrients during your cleanse period.

- 2 tablespoon 100% cocoa powder
- 1 teaspoon pumpkin spice or ground cinnamon
- 2-3 teaspoons Agave nectar

Instructions

Finely chop the ingredients together and thoroughly mix in a food processor. Add agave nectar and continue to chop until the mixture is pretty fine. Form 1 inch balls, refrigerate, and enjoy the frugal feast! You can eat these like a machine but still look lean and mean!

Dark Chocolate Coconut Bars Vegan Recipe (Gluten-Free)


Have a chocolate craving constantly calling you? Afraid that the chocolate you crave will derail your diet? Fear no more with this quick, healthy, and easy dark chocolate coconut treats recipe! And it's 100% vegan with agave nectar instead of honey! It's also a gluten-free option for your sweet tooth. 

Ingredients

Coconut Filling Ingredients: 

- 2 1/2 cups unsweetened coconut shredded 
- 1/2 cup melted coconut oil 
- 1/4 cup agave nectar
- 1 tsp vanilla extract 

Chocolate Topping Ingredients: 

- 8 ounces unsweetened dark chocolate (100% pure cacao) 
- 1 tablespoon coconut oil 
- 1/4 cup agave nectar

Add additional shredded coconut on top if desired!

Instructions

In a large mixing bowl, combine all of the recipe's coconut filling ingredients and mix together until well combined. Evenly divide up the filling between the 12 muffin cups, pressing it in very tightly, making sure it is even. Don’t worry they won’t stick. Place the muffin pan in the freezer make sure it is sitting flat, and freeze until hard, about 30 minutes. 

While the coconut filling is cooling, melt the dark chocolate with the coconut oil. In a double boiler setup on the stove top or in small increments in the microwave. After the chocolate and coconut oil is melted and whisked together and well combined, remove from the heat, and add in the agave nectar. Stir well to combine. Take the muffin tin with the frozen coconut mixture out of the freezer, and divide your chocolate mixture over it, spooning it on top and smoothing the chocolate out to make sure it totally covers the coconut. Put the muffin tin back into the freezer, and freeze until the chocolate has set, about another 30 minutes. Enjoy this fantastic frugal feast as you quash your chocolate cravings and keep your midsection lean!

There are more people with Celiac every year and even more people going gluten-free by choice for nutritional purposes. It's easier to find gluten-free alternatives these days than in previous years, but it is still challenging for some baked goods. Here is a great recipe for gluten free flour that you can use in cakes, breads, pizza, and many other food items. And it won't break your budget either! 

Gluten-Free Flour Mixture 

Yield: 3 cups 

This mix can be used as a one-to-one cup substitution for wheat in most recipes. Gluten-free flour, mix the following ingredients. 

Ingredients

- 2 cups white rice flour 
- 2/3 cup potato starch* 
- 1/3 cup tapioca starch 

All of the above items can be found at most local supermarkets. Whole Foods carries all of these products for instance. These items can be found at less cost at various international food markets. If you do not want to mix your own gluten free flour mixture, most supermarkets carry ready-made gluten free mixtures. 

Binding Agent 

All gluten-free recipes require a binding agent to make up for the lack of gluten. For each cup of gluten-free flour (or flour mix) use an appropriate amount of xanthan or guar gum (found in local markets): 1 tsp for cakes 2 tsps for breads or pizza. 1 tsp works fine for most cookies.

Vegan Gluten-Free Thai Som Tum Recipe

This is a popular Thai dish, called Som Tum (spicy papaya salad or papaya kimchi), that my mom used to make for us when we were kids and since we always begged for more, she would end up making an asinine amount. For just a week or two our fridge would be stuffed to the brim with this spicy deliciousness. But only for a week or two at most, this stuff never lasted very long at our house. So here’s what you need to make this tasty and healthy side that will clear your sinuses and make you cry for more. Enjoy this vegan and gluten-free delicious frugal feast!
Ingredients 

1 tablespoon sugar
1 lime
1 lemon
2 cups green papaya, shredded
2 cloves garlic
1 tablespoon vegan fish sauce alternative
3 thai chili peppers
3 tomatoes cut unto medium sized chunks
Handful of cilantro, chopped

Directions
Place the garlic cloves and the chilies in a high quality food processor and process until crushed into chunks. Set aside. Peel papayas until the whites show and then shred into long pieces using a mandolin. Squeeze juice of lemon and lime over papaya. Mix with sugar, vegan fish sauce, garlic, chili peppers, cilantro and tomatoes.
And that’s it! It’s such an easy dish and one that’s so nutritious for you too. It’s best when served cold and is so refreshing with the sweetness of the papaya, the saltiness from the citrus, and the sourness from the fish sauce. And you know that I’m loving all over that spicy kick from the thai peppers.
Make this dish, and then eat it as a side for whatever your eating, or top it on a fish or another protein as a garnish, or maybe even stuff your face with this stuff for breakfast. OK I am just kidding about the breakfast part. Enjoy the gluten-free vegan frugal feast!

It's also dairy and gluten free as well. It also adds in extra Branch Chain Amino Acids (BCAA's) and Glutamine for extra muscle benefits. Frugal Healthy Recipe: Fro-Yo Frozen Yogurt

I'm always trying to recreate American goodies that I can't find here in Italy; jambalaya, fried rice, chili, muffins...sadly not everything turns out exactly the same. Frozen yogurt is one of those things on my list of Things I Have To Eat As Soon As I Return To America, and I had the most intense craving for it recently that it had to be made. Stat! Truly Yogurt in Wellesley, MA (been there anybody?) has the best frozen yogurt everrrr! There's even a photo of Zo and I on the wall! (This doesn't get you free yogurt apparently. Fail.) Anyway, as I was blending my yogurt and fresh fruits I kept thinking about how mine was going to be exactly the same as Truly's, and that I was going to set up a little stand outside and people would come for miles around to taste this American yogurt thing and I would be rich! Rich I tell you!

Alas.

It was gross. Well, no, not gross, but just yogurty. It literally was like, "Wow, I'm eating yogurt that's frozen. Not Frozen Yogurt." But if you want a healthy snack on a hot day, it's not that bad. 

Frozen Yogurt
(pretty sure I got it from Real Simple, but I can't find the link)
Blend until smooth one container of plain yogurt with 1/4 cup fresh berries or banana. Add 1 teaspoon sugar (or honey) or more to taste. Freeze for at least 1 hour or until semi-firm. 


I mean it looks good doesn't it? I guess I just had Truly on the brain. Oreo and coffee frozen yogurt twist? I'm sorry, it just doesn't get much better than that! I'll forgo my Bikini Blast any day for that!

Roasted Salty Sweet Chickpeas Vegan Gluten-Free Recipe



What could be better than a snack item that is actually good for you? (Don’t answer that. Because though fibrous and healthy things are delightful, what I really want are Cheez-Its. But pretend I didn’t say that.) Chickpeas, people, aka garbanzo beans! They’re the new thing! Roast these vegan and gluten-free treats up and they get all crispy and crunchy. You can put them on salad, eat them with friends over beers, snack on them while you watch period films - the possibilities are so tempting! 






Roasted Salty Sweet Chick Peas

1 can pre-cooked chick peas 
1 tbs olive oil
1 tbs agave nectar
1/4 tsp cinnamon
1/4 tsp red or black pepper
1/4 tsp salt
sprinkling granulated stevia 

Give the chick peas a good rinse and put in a bowl. Spoon the oil on top and then the honey (Use the same tablespoon and the agave nectar just slides right off - a cooking tip that I love!) Sprinkle on the rest of the spices and pour onto a baking sheet covered with wax paper. (It helps them crunch up more). Bake at 375 degrees for 30 minutes or until shriveled looking. 

Modifications

Maybe you're not a salty-sweet kind of person? Substitute the sugar and honey for a tad more salt and spice. Or if you want all sweet, omit the salt and add more cinnamon and sugar to take things to the next level! You'll love them.
